Brioche Bread Pudding Muffins with Maple Caramel

Preheat oven to 300°. Spread bread cubes evenly in a shallow baking pan
- 8 oz. brioche bread cut into 3/4” cubes (about 6 cups)
- Softened butter
- 2 c buttermilk
- 5 T melted unsalted butter
- 1/3 c plus 2 T packed light brown sugar
- 2 eggs
- 2-1/4 t vanilla
- 1/4 c pure maple syrup
- 2 T heavy cream
Sriracha Mayo

- 1/ 3 c mayo
- 2 T sriracha chile sauce
- 1 t sesame oil
- 1/4 t salt

Sweet Chocolate and Coconut Wontons

- 1 t milk chocolate chips
- 1/2 t sweetened shredded coconut

Chicken and Leek Dumplings

Cook chicken, mushrooms (optional), leek, ginger and garlic in sesame oil, until tender, about 7 minutes
- 6 oz. ground chicken
- 8 oz. shitake mushrooms (optional)
- 1 c chopped leeks
- 3/4 t grated fresh ginger
- 2 minced garlic cloves
- 1 T sesame oil
- 1/2 t soy sauce

Egg and Bacon Muffins

Preheat oven to 400°F. In a large skillet cook bacon just until it begins to crisp
- 4 slices bacon cut in thirds
- 5 eggs
- Salt and ground black pepper
- 1 cup all-purpose flour
- ½ cup yellow cornmeal
- 2 tablespoons sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk
- ¼ cup vegetable oil or butter, melted
- ½ cup shredded cheddar cheese
- Maple or cane syrup (optional)
Hash Brown Quiche

Preheat oven to 325°F. Peel and coarsely shred potatoes
- 1 ¾ pounds russet potatoes
- ½ teaspoon salt
- teaspoon ground black pepper
- 1 – 2 tablespoon olive oil
- 1 tablespoon butter
- 4 slices bacon
- 1 ¼ cups coarsely shredded zucchini (1 medium)
- ½ cup chopped red onion (1 medium)
- 4 eggs, lightly beaten
- 1 cup half-and-half or light cream
- ¼ teaspoon crushed red pepper
- 1 cup shredded Swiss cheese (4 ounces)
- 1 tablespoon all-purpose flour
Hash Brown Potato Cakes

Preheat oven to 300 degrees F
- 1 pound russet or round red potatoes
- ½ of a medium onion, very thinly sliced
- 1 tablespoon olive oil
- 2 teaspoons snipped fresh thyme or 1/4 teaspoon dried thyme, crushed
- ¼ teaspoon salt
- teaspoon ground black pepper
- Nonstick cooking spray
Sloppy Joe Bites

In a large skillet cook and stir beef, sweet pepper, and onion over medium heat until beef is no longer pink
- ½ pound ground beef
- 1 small red sweet pepper, chopped (about 2/3 cup)
- 1 small onion, chopped (about 1/2 cup)
- 2 teaspoons chili powder
- 8 ounce can tomato sauce
- ½ cup chopped dill pickle slices
- ½ cup shredded cheddar cheese (2 ounces)
- 2 – 3 teaspoons yellow mustard
- Nonstick cooking spray
- 16.3 ounce package (8) refrigerated biscuit dough
- Milk
- Grated Parmesan cheese
Buttered Rosemary Rolls

- 10 in 1 lb 9 oz. frozen unbaked dinner rolls such as Bridgford Parkerhouse Roll Dough
- 1/4 c salted butter melted
- 1-1/2 t coarsely chopped rosemary
- 1/4 t coarse sea salt
