Roasted Potato Salad with Bacon and Blue Cheese

Preheat oven to 375. Line a large rimmed baking sheet with aluminum foil and set aside
- 2 lbs. red new potatoes
- 1/4 c olive oil
- 2-1/2 t kosher salt divided
- 2 t pepper divided
- 1/2 c mayo
- 1/3 c sour cream
- 1-1/2 T white wine vinegar
- 1 t sugar
- 1 T coarse grained Dijon mustard
- 1 c or 2 stalks chopped celery
- 3/4 c blue cheese crumbles
- 2 large hard cooked eggs, chopped
- 1/2 c thinly sliced scallions
- 1/2 c crumbled cooked bacon about 2 slices
Green Beans with Crispy Shallots & Creme Fraiche

Preheat oven to 300. Line a baking sheet with parchment paper
- 3 large shallots, thinly sliced
- 3 T olive oil divided
- 1/2 t fine sea salt divided
- 1-1/2 lb. green beans trimmed
- 1 t black poppy seeds
- 2 T preserved lemons
- 8-1/2 oz. creme fraiche, about 1 cup
- 1 garlic clove grated
- 1/2 t pepper
Bread Pudding with Caramel-Rum Sauce

Whisk together milk, zest, eggs, cinnamon, 2 c heavy cream, 1 c sugar and 1 t vanilla in a large bowl
- 2 c whole milk
- 1 T grated orange zest from 1 orange
- 5 large eggs at room temp
- 2-3/4 c cold heavy whipping cream divided
- 2 c sugar divided
- 2 t vanilla divided
- 10 c crustless stale bread pieces from 12 slices
- 1/2 c unsalted butter plus more for greasing pan
- 1/2 c light corn syrup
- 3/4 c dark rum
- 1/2 t kosher salt
Peanut Butter Buckeyes

- 3-3/4 c powdered sugar
- 1-1/2 c peanut butter
- 1/2 c butter melted
- 1 t vanilla
- 1/2 t salt
- 2 c semi-sweet chocolate chips
- 1 T shortening
Homemade Peanut Butter Cup

- 6 ounces vanilla wafers (about 46)
- 5 T unsalted butter melted
- 2 T sugar
- 1/4 teaspoon kosher salt

- 1/3 cup sugar
- 1/4 cup cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 2 large egg yolks
- 2 1/2 cups whole milk
- 4 ounces milk chocolate coarsely chopped (2/3 cup)
- 2 ounces semisweet chocolate coarsely chopped (1/3 cup)
- 2 tablespoons unsalted butter room temperature
- Topping
- 1 cup heavy cream
- 2 tablespoons confectioners' sugar
- 1 vanilla bean, split and seeds scraped
Apple Pie Eggrolls

In a large skillet melt butter over medium heat
- ¼ cup butter
- 4 medium Granny Smith apples chopped (about 5 cups)
- 2 tablespoons sugar
- 2 tablespoons packed brown sugar
- 1 teaspoon apple pie spice or ground cinnamon
- ½ teaspoon vanilla
- Pinch salt
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon juice
- 10 egg roll wrappers
- 1 egg lightly beaten
- Vegetable oil for frying
- Powdered sugar or granulated sugar

- 1 12 ounce bag fresh cranberries

- 20 fresh sweet cherries pitted or 1 cup frozen unsweetened pitted dark sweet cherries

- 1 cup packed dark brown sugar
- 1 teaspoon finely shredded lemon peel

- 2 tablespoons unsalted butter
- ¼ cup whipping cream
- 1 teaspoon vanilla bean paste (can substitute pure vanilla extract)
- 1 egg

- 1 cup (2 sticks) cold unsalted butter divided plus more for baking sheet
- 8 apples (such as Gala), peeled and cored and sliced (11 cups)
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1 cup packed light brown sugar divided
- ¾ teaspoon kosher salt divided
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- ¾ teaspoon ground cinnamon
- ½ teaspoon ground cardamom (optional)
