Cranberry-Rosemary Galette

1.Preheat oven to 375 degrees F
- 1 recipe Pastry for a Single Crust Pie
- 3 cups fresh or frozen cranberries
- 3/4 cup dried cranberries
- 3/4 cup sugar
- 3/4 cup cranberry juice
- 1 large orange (1 1/2 tsp. zest; 6 Tbsp. juice)
- 4 teaspoons chopped fresh rosemary
- 1/2 cup chopped walnuts
- Milk (optional)
- Fresh rosemary leaves
Roasted Pork Chops with Peaches

Heat oven to 400. Cook couscous according to package directions
- 1- 10 oz. package couscous
- 1 T olive oil
- 4 bone-in pork chops
- Kosher salt
- Black pepper
- 2 peaches cut into wedges
- 1 small red onion, cut into thin wedges
- 3 T white wine vinegar
- 1/2 c fresh basil leaves
Corn and Gruyere Mashed Potatoes

1. Preheat oven to 400°
- 3 3 3 lbs. russet potatoes, peeled and chopped
- 2 2 2 tsp. salt, divided
- 3 3 4 cups corn kernels (from 4 ears)
- 2 2 2 cups heavy cream
- 3/4 3/4 3/4 cup chopped scallions
- 4 4 1 oz. Gruyère cheese, shredded (about 1 cup)
- 4 4 4 garlic cloves, chopped
- 1/2 1/2 1/2 tsp. freshly ground black pepper
- 1/2 1/2 1/2 tsp. ground nutmeg
- Salted butter, for greasing
- 4 4 1 oz. Parmesan cheese, grated (about 1 cup)
Black Forest Ham & Gruyere Cheese Puffs

Place rack in center of oven and preheat to 375
- 2 T unsalted butter
- 1/2 c water
- 3/8 t cayenne pepper
- 1/4 t kosher salt
- 1/2 c bread flour
- 3 large eggs, divided
- 5 oz. guyere cheese (about 1-1/4 c), grated, divided
- 2 oz. black forest ham (about 1/3 c), finely chopped
- 1 large egg
- Coarse or flaky sea salt
Fresh Apple Cake With Topping

Mix all cake ingredients together, bake in 9x13 pan at 350
- Topping:
- 1 c butter
- 3 c sugar
- 4 eggs
- 3 c flour
- 2 t soda
- 1/2 t salt
- 2 t cinnamon
- 1 t nuts
- 3 c sliced apples
- 1/2 c cold coffee
- 6 T melted butter
- 6 T milk
- 1 c brown sugar
- 1 c coconut
Gooey Chocolate Pudding Cakes

Preheat oven to 350. In a medium bowl, combine flour, 1/4 c sugar, baking powder and salt
- 1/2 c flour
- 1/4 c sugar
- 3/4 t baking powder
- 1/4 t salt
- 1/3 c milk
- 1 T oil
- 1 t vanilla
- 1/4 c nutella
- 1/3 c semisweet chocolate pieces
- 1/2 c sugar
- 1/3 c semisweet cocoa powder
- 3/4 c boiling water
- Ice cream (optional)
- Sliced strawberries (optional)
Bernaise Sauce

In microwave safe dish combine vinegar, shallots and tarragon
- 3 T and 1/2 t white vinegar
- 2 T and 1 1/4 t minced scallops
- 1 1/4 t tarragon
- 2 1/2 egg yolks, beaten
- 1/4 c and t butter
Creamy Ricotta Spaghettini

In a pot, cook the spaghettini, drain and reserve 1 c of pasta water
- 8 oz. dried spaghettini
- 2 T olive oil
- 3/4 c roasted, salted, shelled pistachios, chopped
- 1 clove garlic, minced
- 1 c ricotta cheese
- 1/2 c parmesan cheese
- 5 oz. argula (optional)

Chocolate Date Cake

- 1-1/4 c dates (8 oz.)
- 1 c boiling water
- 1 t baking soda
- 1 c sugar
- 1/2 c shortening
- 2 eggs
- powdered sugar
- 1 T grated orange rind
- 1 t vanilla
- 1-3/4 c flour
- 1/2 t salt
- 6 oz. chocolate chips
- 1/2 c chopped nuts
