- 4 t black pepper
- 1/4 c grated Parmigiano-Reggiano cheese plus more for garnish
- 1/4 c grated Pecorino Romano cheese plus more for garnish
Fast Bolognese

- 1/2 c (1 stick) unsalted butter
- 2 yellow onions, chopped
- 6 carrots, chopped
- 12 cloves garlic, Finley sliced
- 1 1/2 pound ground sirloin
- 1 1/2 pound ground pork

- 28 ounce can tomato purée
- 28 ounce can whole peeled tomatoes
