Pita Pizzas With Olives and Feta

Place oven rack in upper third position and heat broiler to low
- 4 6-in. whole-wheat pocketless pitas
- 1 tablespoon olive oil
- 1 cup prepared hummus
- 1 15-oz. can chickpeas, drained and rinsed
- ½ cup kalamata olives, pitted and halved
- 1 small red onion, thinly sliced
- 6 ounces feta cheese, crumbled (about ¾ cup)
- ¼ teaspoon crushed red pepper (optional)
- ¼ cup coarsely chopped fresh mint or oregano
Texas Sheet Cake

Boil for 2 mins: water, cocoa, butter
- 1 c water
- 4 T cocoa
- 2 sticks butter
- 2 c sugar
- 2 c flour
- 1/2 t salt

Toasted Icebox Cake

1.Preheat oven to 350 degrees F
- 1 cup shredded coconut
- 2 14 ounce cans unsweetened coconut milk,* unshaken and chilled overnight
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 6 3/4 ounce pkg. (24 to 28) crisp caramel or square shortbread cookies
- 1 tablespoon hot fudge-flavor ice cream topping, warmed
- 1 tablespoon caramel-flavor ice cream topping
- Toasted unsweetened shaved or shredded coconut
Super Crunchy Snack Mix

- 4 c popcorn
- 2 c golden crisp cereal
- 2 c miniature marshmallows

Coconut Cream Layer Cake

Prepare coconut cream filing: Stir together sugar, coconut and sour cream, cover and chill for 2 hours
- 2 c sugar
- 12 oz. sweetened shredded coconut
- 8 oz container sour cream
- 1 pkg. butter golden cake mix
- 8 oz. container frozen whipped topping, thawed
