Carrot Coconut Bread

1. Heat oven to 375° F. Coat an 8½-by-4½-inch loaf pan with butter and dust with the flour; tap out the excess
- 1/2 cup unsalted butter, melted, plus more for the pan
- 2 cups flour, plus more for dusting
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 2/3 cup light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup mashed ripe banana (from 3 medium)
- 2/3 cup sour cream
- 1 cup packed shredded carrot (from 2 large)
- 1 cup finely shredded unsweetened coconut
Yellow Cake with Salted Chocolate Granache

Preheat oven to 350. Grease and flour two 9x2" round baking pans; set aside
- 3 c flour
- 2-1/2 t baking powder
- 1 t kosher salt
- 2 c sugar
- 1 c butter, room temp
- 4 eggs
- 2 egg yolks, room temp
- 1 t vanilla
- 1 c buttermilk, room temp
- Granache
- 16 oz. dark chocolate, chopped
- 2 c whipping cream
- 1/4 t kosher salt
Remoulade Sauce

Combine all ingredients. Refrigerate up to one week
- 1/2 c mayonnaise
- 2 T chopped dill pickle
- 1 T Dijon mustard
- 1 T ketchup
- 1 T finely chopped shallot
- 2 t lemon juice
- 1/8 t cayenne pepper
Ricotta Meatballs

- 1-1/2 lbs. ground beef
- 1/2 c ricotta
- 1/3 c panko bread crumbs
- 1/2 c finely chopped onions
- 1/4 c chopped parsley
- 1/4 c grated Parmesan
- 2 T milk
- 1 egg, beaten
- Salt and pepper
Wellington Sausage Rolls

Preheat oven to 400. Melt butter in a small skillet over medium heat
- 2 T unsalted butter
- 3-1/2 oz. mushrooms, finely chopped
- 6 large beef sausages, casings removed
- 1 T Worcestershire sauce
- 1 T hot sauce
- 1 t fine sea salt
- 1/2 t pepper
- Flour for dusting
- 1 lb. puff pastry
- 1/4 c whole-grain mustard
- 1 egg, beaten
Chocolate Torte

- 1-1/4 c flour
- 1-1/2 T sugar
- 1 stick cold butter, cut into small pieces
- 1 egg yolk, beaten with 2 T ice water
- 3/4 c heavy cream
- 1/2 c milk
- 8 oz. bittersweet chocolate, chopped
- 1 egg, lightly beaten
Cilantro Cream Sauce

Stir together. Store for up to 3 days in fridge
- 1 c plain yogurt
- 1/2 c firmly packed chopped fresh cilantro
- 1 t kosher salt
- 3 T fresh lime juice
Creamy One Pot Mashed Potatoes

Place potatoes, half-and-half, and 2 teaspoons salt in a large saucepan
- 4 pounds Yukon Gold potatoes, peeled and cut into 1-in. pieces
- 4 cups half-and-half
- 5 teaspoons kosher salt, divided
- ½ cup (1 stick) unsalted butter, melted
- ½ cup sour cream
Hawaiian Baked Ham and Swiss Sandwiches

Heat over to 350. Melt butter and mix in mustard, Worcestershire sauce, onion and poppy seed
- 1-12 pack King's Hawaiian rolls
- 1 lb. deli ham, shaved
- 1 lb. swiss cheese, thinly sliced
- 1-1/2 sticks butter
- 3 T Dijon mustard
- 1-1/2 t Worcestershire sauce
- 3 t poppy seeds
- 1 onion, chopped
Potato Chip Chicken

- 1 clove garliic
