Ingredients

  • 3 c flour
  • 2-1/2 t baking powder
  • 1 t kosher salt
  • 2 c sugar
  • 1 c butter, room temp
  • 4 eggs
  • 2 egg yolks, room temp
  • 1 t vanilla
  • 1 c buttermilk, room temp
  • Granache
  • 16 oz. dark chocolate, chopped
  • 2 c whipping cream
  • 1/4 t kosher salt

Step 1

Preheat oven to 350. Grease and flour two 9x2" round baking pans; set aside. In medium bowl, sift together flour, baking powder, and salt. In very large bowl, beat sugar and butter on medium 6-8 mins or until light and fluffy. Add eggs and yolks, one at a time, beating until combined after each addition. Beat in vanilla. Add flour mixture to beaten mixture in 3 additions, alternating with buttermilk.
Divide between pans, filling about 3-1/4 c batter each. Bake 35 mins or until toothpick comes out clean. Remove. Cool in pans on wire rack for 10 mins. Remove and cool completely.
Spread salted chocolate Granache over top layer, stack layers on plate. Frost sides. Sprinkle with sea salt.

Granache

Place dark chocolate in large heat proof bowl. In sauce pan bring whipping cream to a boil. Pour over chocolate. Let stand 2 mins. Stir in salt. Cool in ice bath 15-20 mins. Beat with mixer 2 mins or until fluffy.
