Spicy Street Corn Salad

Whisk together mayonnaise, chives, chopped cilantro leaves and stems, jalapeño, lime zest and juice, chili powder...
- 1/2 c mayonnaise
- 1/4 c chopped fresh chives
- 1/4 c chopped fresh cilantro leaves and tender stems and 1/2 c whole leaves and tender stems
- 1 small jalapeño, seeded and finely chopped
- 1 T lime zest + 1/4 c juice
- 1 t chili powder
- 3/4 t pepper
- 1/2 t kosher salt
- 6 oz. cotija cheese, crumbled (1-1/2 c), divided
- 1-15.5 oz. can pinto beans, drained and rinsed
- 3 c fresh corn kernels (4-5 ears)
- 3 c loosely packed arugula
Pumpkin Pie

Mix first 5 ingredients. Stir in pumpkin and gradually stir in milk
- 3/4 c sugar
- 1/2 t salt
- 1 t cinnamon
- 1/2 t ginger
- 1/4 t ground cloves
- 2 large eggs
- 1-15 oz can pumpkin
- 1-12 oz can evaporated milk

Heat oven to 350 with the racks in the middle and top positions
- For the Cupcakes
- 1 c graham crackers crumbs (from 9 crackers)
- 1 c flour
- 1-1/2 t baking powder
- 1/2 t fine salt
- 1/2 c (1 stick) unsalted butter at room temp
- 3/4 c sugar
- 2 large eggs
- 1 t vanilla
- 3/4 c whole milk
- For the Ganache
- 1/3 c heavy cream
- 6 oz. Bittersweet chocolate, chopped
- For the Topping
- 12 marshmallows
