Dark Chocolate Raspberry Tart

Pulse cookies in processor until finely ground
- 20 oreos
- 3 T unsalted butter, melted
- 1/2 c raspberry jam
- 8 oz. (62% cacao)
- 1-1/4 c heavy cream
- 2 large eggs
- 1-1/2 t vanilla
- 1/2 t kosher salt
- Powdered sugar
- Fresh raspberries
- Sweetened whipped cream
Lemon Lime Bars

Preheat oven to 350. Grease 13x9x2 pan
- 2 c flour
- 1/2 c powdered sugar
- 2 T cornstarch
- 1/4 t salt
- 3/4 c butter, cut up
- 4 eggs, lightly beaten
- 1-1/2 c sugar
- 1/3 c half & half
- 3 T flour
- 1 t finely shredded lemon peel
- 1/3 c lemon juice
- 1 t finely shredded lime peel
- 1/3 c lime juice
- 1 drop green food coloring
7 Layer Salad

Place each item in the above order in a large salad bowl
- Head lettuce sliced in 1/2 inch slices.
- Frozen peas - cooked and drained
- Chopped onion
- Chopped celery
- Mayonnaise
- Sprinkle sugar

- 2 t baking powder
- 1 t kosher salt
- 5 oz. Parmigiana Reggiano cheese, finely grated (1-1/4 c)
- 1 c unsalted butter, softened
- 2 c sugar
- 4 eggs, lightly beaten
- 4 oz. pkg cream cheese, softened and cut into cubes
- 8 oz. sour cream
- 1 c whipping cream
- 2 T powdered sugar
- 1/4 t cinnamon
- Fresh blackberries
- Fresh mint

Stuffed Mushrooms with Lemon-Pea Hummus

Preheat oven to 425. Clean mushrooms
- 12 large fresh mushrooms, 1-1/2-2" in diameter
- Nonstick cooking spray
- 1 c shelled fresh English peas (1 lb in pods)
- 2 T olive oil
- 1/2 t finely shredded lemon peel
- 1 T lemon juice
- 1-2 t snipped fresh mint
- 1 T chopped green onion
- 1 clove minced garlic
- salt and pepper
- 2 T grated Parmigiano-Reggiano cheese
- pea shoots or small fresh mint leaves (optional)

- 1 c crushed chocolate wafer cookies (20 cookies)

- 1/3 c sour cream
- 1/4 c sugar
- 1 egg
- 1 T raspberry liqueur
- 1 t cornstarch
