Ina's Pecan Squares

Preheat oven to 350F. Make the crust by combining the softened butter and sugar in the bowl of a stand mixer
- Crust:
- 1 1/4 pounds unsalted butter, softened
- 3/4 cup granulated sugar
- 3 extra large eggs
- 3/4 teaspoon pure vanilla extract
- 4 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon Salt
- Filling:
- 1 pound unsalted butter
- 1 cup honey
- 3 cups light brown sugar
- 1 teaspoon grated lemon zest
- 1 teaspoon grated orange zest
- 1/4 cup heavy cream
- 2 pounds pecans, chopped
- My Notes - The flavor from the orange zest is very, very pronounced in this recipe - although yummy, next time I think I'll go for a more traditional pecan pie-like flavor by omitting the citrus zest
- note from roxx:haven't tried these yet, I will not use the zest, but use vanilla instead.

- 1/2 cup rice wine vinegar
- 1 tablespoon hot chili sauce (recommended: sambal oelek)
- 1 (1-inch) piece ginger, finely chopped
- 3 garlic cloves, smashed and finely chopped
- 1 scallion, both green and white parts, thinly sliced
- 1 orange, zested
- 4 pork tenderloins
- 2 tablespoons coriander seeds, toasted and ground

- Ingredients
- For the Filling
- 2 pounds ground pork or beef
- 2 medium onions, finely diced
- 2 jalapeno chiles, minced (ribs and seeds removed for less heat, if desired)
- 1/2 teaspoon chili powder
- 2 cans (14.5 ounces each) tomatoes, diced
- coarse salt and ground pepper
- 1 cup fresh cilantro, chopped
- For the Dough
- 4 cups all-purpose flour, plus more for dusting
- 2 teaspoons baking powder
- 2 teaspoons salt
- 1/2 cup (1 stick) cold butter, cut into small pieces
- 1 cup cold water
- 1 large egg, lightly beaten with 1 tablespoon water (do not beat until ready to bake)
Grilled BBQ Chicken Kebabs

For the sauce, bring all the ingredients to a simmer in a small saucepan over medium heat

- 1/2 cup ketchup
- 1/4 cup molasses or honey
- 2 Tbs grated onion (grated on the large wholes of a box grater)
- 2 Tbs Worcestershire Sauce
- 2 Tbs Dijon mustard
- 2 Tbs cider vinegar
- 1 Tbs brown sugar
- hot sauce, to taste

- 2 pounds boneless, skinless chicken thighs or breasts, trimmed of excess fat and cut into 1-inch cubes
- 2 tsp kosher salt
- 2 Tbs sweet paprika
- 4 tsp sugar
- 2 tsp smoked paprika

- 2 slices bacon, cut into 1/2-inch pieces

- C butter flavored Crisco
- 1 C creamy peanut butter (preferably the kind without salmonella)
- 1 C sugar
- 1 C packed brown sugar
- 1 t vanilla
- 3 eggs
- 3 C flour
- 2 t baking soda
- 1/2 t salt
- 1 C creamy peanut butter
- 1/2 c real butter, softened
- 4 C powdered sugar
- 2 t vanilla
- 5-6 T milk
Meatloaf w/ bbq glaze****

In a large bowl, beat eggs
- Topping:
- 2 eggs
- 2/3 cup milk
- 3 slices bread, torn
- 1/2 cup grated carrot
- 1 cup (4 ounces) shredded cheddar or part-skim mozzarella cheese
- 1/2 tsp onion powder ( family doesn't like onion pieces)
- 1 tablespoon minced fresh parsley or 1 teaspoon dried parsley
- 1 teaspoon dried basil, thyme or sage, optional
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 pounds lean ground beef
- 8 oz. Can Tomato Sauce
- 1/2 C. Brown Sugar
- 1 t. Mustard
Two Versions- Mexican Layer Dip****

- 2 cans frozen avocado (thawed)
- 2 small jars taco sauce(1 hot, 1 med)*salsa works here too

- 2-8 oz pkg cream cheese
- 1 pkg taco seasoning (to taste)

Parmesan Fillets****

I like the added spice of this recipe
- 2 lbs tilapia fillets (orange roughy, cod or red snapper can be substituted)
- 2 tablespoons lemon juice
- 1/2 cup grated parmesan cheese
- 4 tablespoons butter, room temperature
- 3 tablespoons mayonnaise
- 3 tablespoons finely chopped green onions
- 1/4 teaspoon seasoning salt (I like Old Bay seasoning here)
- 1/4 teaspoon dried basil
- black pepper
- 1 dash hot pepper sauce
