Black and White Sheet Cake***

Cake: Preheat oven to 350F and grease a 9×13-inch baking pan
- Black and White Marble Sheet Cake
- 1/4 cup sugar
- 1/4 cup cocoa powder
- 3 tbsp water, hot
- 1/2 tsp vanilla extract
- 2 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 1/2 cups sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream (regular or low fat)
- 1 cup milk (whole or low fat)
- Chocolate Fudge Frosting
- 1 cup sugar
- 1/4 cup cocoa powder
- 1/4 cup butter, softened
- 1/2 cup milk (lowfat is fine)
- 2 tbsp light corn syrup
- 1/8 tsp salt
- 2-3 cups powdered sugar
- 1 tsp vanilla extract
Dirty Rice Casserole***

350* -Mix all the ingredients in greased casserole dish
- 1 cup rice
- 2 cans cream of mushroom
- 2 cans water
- 1 Tb Worcestershire sauce
- 2 Tb chopped parsley(1-2 tsp dry)
Pork Fried...Cauliflower "Rice"

1. Put the grated cauliflower in a microwave-safe container and nuke for two minutes
- Ingredients:
- 1 head fresh cauliflower, stems removed, pulsed to rice texture in the food processor
- 2 eggs
- 2 teaspoons + 2 tablespoons coconut aminos
- 1 teaspoon + 1 teaspoon + 1 tablespoon coconut oil
- 1/4 white or yellow onion, diced
- 1 cup steamed broccoli florets, cut into 1/2-inch pieces
- 8 oz. leftover cooked pork (like BBQ pulled pork or pork carnitas), cut into 1/2-inch cubes
- 2-3 scallions, green only
- salt & pepper, to taste
- sesame oil, to taste (optional)
- 2 teaspoons sesame seeds for garnish (optional)
Marinated Cheese*****

- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- 3 tablespoons chopped fresh parsley
- 3 tablespoons minced green onions
- 3 cloves garlic, minced
- 1 teaspoon sugar
- 3/4 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 (8 ounce) block white cheddar cheese
- 1 (8 ounce) block monterey jack
Mexican Pot Roast Tacos

Season all sides of the beef with a fair amount of salt and pepper
- Beef :
- 2 pounds beef shoulder
- Kosher salt
- Freshly ground black pepper
- Extra-virgin olive oil
- 2 cloves garlic, smashed
- 1 large onion, sliced
- 1 (28-ounce) can crushed tomatoes, (recommended: San Marzano)
- 1 tablespoon ancho chile powder
- 1 tablespoon cayenne pepper
- 1 tablespoon ground cumin
- 3 bay leaves
- Vegetable oil, for deep frying
- 6 fresh medium corn tortillas
- Kosher salt
- 3 cups finely shredded white cabbage
- For the simple salsa:
- 1 (28-ounce) can whole tomatoes, drained, reserving the juice (recommended: San Marzano)
- 1 small red onion, roughly chopped
- 1 Serrano chile
- 1 garlic clove, roughly chopped
- 2 limes, juiced
- 1/2 cup chopped cilantro leaves
- Kosher salt
- Freshly cracked black pepper
- Extra-virgin olive oil, for drizzling
- Guacamole:
- 6 ripe avocados
- 3 limes, juiced
- 1 medium yellow onion, chopped
- 1 garlic clove, smashed then minced
- 2 serrano chiles, cut into rounds

- Ingredients:

- 1 5/8 cups all-purpose flour (spooned and leveled)
- 3/4 cup (1 1/2 stick) cold unsalted butter, cut into small pieces

- For the filling:
- 1 3/4 cups sweetened shredded coconut
