Travis' Zucchini Hotdish

1. Grease casserole. Cook zucchini, carrots and onion in small amount of water
- 3 medium zucchini thinly sliced
- 1 large onion, chopped
- 1-1/2 lbs hamburger
- 1/2 tsp salt
- 1/8 tsp pepper
- 6 ounce box stove top stuffing
- 1 cup grated carrots
- 1 can cream of chicken soup
- 1 cup sour cream
Gail's Sinfully Rich Fudge Brownies

Preheat oven to 350 degrees
- Chocolate Marshmallow Frosting: see below:
- 4 oz unsweetened chocolate
- 1 cup butter
- 4 eggs
- 2 cups granulated sugar
- 1 Tbsp vanilla extract
- 1/4 tsp salt
- 1 cup flour
- 4 oz unsweetened chocolate
- 1 cup butter
- 2 eggs
- 1 Tbsp vanilla extract
- 3-3/4 cups powdered sugar
- 4 cups miniature marshmallows
Zesty Quinoa Salad

"This bright and colorful salad is a great summertime recipe (or anytime you want to feel like it's summertime)
- 1 cup quinoa
- 2 cups water
- 1/4 cup extra-virgin olive oil
- 2 limes, juiced
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes, or more to taste
- 1 1/2 cups halved cherry tomatoes
- 1 (15 ounce) can black beans, drained and rinsed
- 5 green onions, finely chopped
- 1/4 cup chopped fresh cilantro
- salt and ground black pepper to taste
Rice Meatballs from Judy

Bake 1 hour or so at 350 degrees This is a recipe the kids could help make as it is so easy
- Liquid to pour over the meatballs:
- 2 pounds raw hamburger
- 1 package onion soup mix..
- 2 cups raw minute rice
- shape into meatballs... I use my large scoop
- 2 cans tomato soup
- 1 15 oz. can tomato sauce
- 1 46 oz. tomato juice
- I also add a little brown sugar
- Mix and pour over the meatballs

- 1/2 cup soy sauce
- 3/4 cup brown sugar
- 2 Tablespoons five spice seasoning

So simple - just lay biscuits flat in 2 9" pie pans
- 2 cans Bisquick buttermilk biscuits
- 3/4 cup brown sugar
- 3 tbsp 1/2 & 1/2
- 1/4 cup margarine

- 14 ounce package Deluxe macaroni and cheese dinner
- 1 pound ground beef
- 1 package taco seasoning mix
- 3/4 cup water
- 3/4 cup sour cream
- 1-1/2 cups shredded cheddar Cheese
- 1 cup thick and chunky salsa
Hot Artichoke and Spinach Dip

1.Preheat oven to 350 degrees F (175 degrees C)
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Romano cheese
- 1 clove garlic, peeled and minced
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic salt
- salt and pepper to taste
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1/2 cup frozen chopped spinach, thawed and drained
- 1/4 cup shredded mozzarella cheese
