CHILE AND CHEESE BREAKFAST CASSEROLE

Pierogi Casserole from Sis Judy

350 oven Place the potatoes in a large pan with water and boil till the potatoes are tender
- 5 good sized potatoes, peeled and cubed
- 1 stick butter
- 1 onion, chopped
- 1/2 of a 16 oz. package lasagna noodles
- salt and pepper to taste
- 3 Tbsp. fresh chives
- 1/2 cup milk
- 1/2 pound bacon, diced
- 6 cloves of fresh garlic
- 2 cups cheddar cheese, shredded
- 1 (8 oz. container) sour cream
Pressure Cooker Pigs in a Blanket

Cut steak into four strips and pound them flat with a meat mallet
- 1 pound boneless round steak (1/4 inch thick)
- salt and ground black pepper to taste

Becky's Avocado Chicken Enchiladas

1. Preheat oven to 375 degrees
- Sauce:
- 1 Tablespoon butter
- 3 cloves garlic, minced
- 1 Tbsp flour
- 1 cup chicken stock
- 2 teaspoon each cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup chopped cilantro (I used dried)
- 1 cup mild or medium salsa verde (depending on how hot you want it)
- 1/2 cup sour cream
- Ingredients for Enchiladas
- 3-4 cups cooked chicken breasts, chopped or shredded
- 2 cups shredded Mexican-style cheese blend
- 3 avocados, peeled and chopped
- 8 flour tortillas

- 2/3 cup white sugar
- 1 teaspoon salt

- 2 Tablespoons soy sauce
- 2 Tablespoons lemon juice
- 1 cup coarsely-chopped green pepper
- 1 Tablespoon chopped pimiento

- Mix following in another pan:
- 1 1/2 cups broken spaghetti cooked and drained
- 1 pound lean ground beef
- 1 chopped onion
- 1 jar spaghetti sauce
- 2 Tbsp. butter
- 1 Tbsp. flour
- 3/4 cup evaporated milk
- 1/3 cup water
- 2 cups shredded cheddar cheese (can use less if you wish)
- Shredded parmesan cheese
- Shredded mozarella cheese

- 8 ounce package cream cheese
- 2 pound box Velveeta Cheese, cubed
