Pam's Gourmet Dressing

- 8 cups cubed bread
- 12 Oz Jimmy Dean sage flavored sausage
- 1 cup celery, chopped
- 1 cup onion, chopped
- 1 cup dried cranberries
- 1/2 cup pecans, chopped
- 1 cup cooked wild rice
- 3 cups chicken broth
- sage to taste
Prime Rib

A nearly foolproof and easy recipe for serving up a smashing Roasted Prime Rib for your special holiday dinner
- There are no measurements here. Just generous amounts of the following:
- Step 1
- So, my roast is 5.75 lbs. x 5 minutes = 28.75 minutes. I will round up to 29 minutes and add 1 minute for the heat lost when opening the oven door. Keep this in the back of your mind for future reference.
- Butter at room temperature
- Herbs de Provence
- Fresh cracked pepper
- Kosher salt – a generous amount
- Chef Ron Lock’s Spicy Horseradish Sauce (optional)
5-Spice Marinade

1. Mix together all ingredients and pour over meat so it is covered
- 1/2 cup soy sauce
- 2 cups water
- 1/2 cup brown sugar
- 3 cloves garlic, crushed
- 1/4 cup thin sliced ginger
- 2 to 3 stalks lemon grass or a hefty squeeze from the tube
- 2 Tbs 5-spice powder
- 1 tsp chili paste
- 8 to 10 leaves of cilantro
- 2 Tbs black peppercorns
Judy's Creamy Fudge

1. Grease a 9X13 inch pan and a 9X9 pan
- 4 1/2 cups Sugar
- 1 Large Can Evaporated Milk
- 1/2 cup Butter
- 32 Marshmallows, Cut Up
- 2 Large Hershey Bars
- 12 oz Chocolate Chips

Fourth of July Chicken

1. Combine dry ingredients in a plastic zipped bag
- 2 large frying chickens, cut into pieces
- 3 teaspoons salt
- 2 teaspoon each fresh ground black pepper
- 2 cups flour
- 1 teaspoon cayenne pepper
- 1/2 teaspoon sage
- 1/4 teaspoon garlic powder
- 1 cup buttermilk
White Bean and Ham Soup

Mash one can of beans, set aside
- 1 (15 1/2 oz.) cans great northern beans, rinsed and drained.
- 2 medium carrots, diced
- 1 small onion chopped
- 2 small stalks celery diced
- 2 Tbsp.butter
- 2 1/4 cups chicken broth
- 1 1/2 cups cubed fully cooked ham
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 bay leaf
Steak Butter

Combine all ingredients except the steak in a saucepan and heat (or microwave in glass bowl) until butter melts
- 1/2 cup butter
- 1/4 cup fresh minced parsley
- 2 tsp Worcestershire sauce
- 1/4 cup minced onion
- 1/2 tsp dry mustard
- 1/2 tsp pepper
- 3 pounds steak
Garlic Green Beans

Place beans and water in a 2-quart microwave-safe dish
- 1 pound fresh green beans, ends trimmed
- 1/4 cup water
- 1 Tablespoon butter or margarine, melted
- 3 cloves garlic, minced
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/3 cup minced fresh parsley
Baked Pretzels

- INGREDIENTS:
- 1 cup beer
- 1 tablespoon margarine
- 2 tablespoons white sugar
- 1 teaspoon salt
- 3 cups all-purpose flour 3/4 teaspoon active dry yeast
- 1 egg
- 1 tablespoon warm water (110
- degrees F/45 degrees C)
- 2 tablespoons kosher salt
Judy's Hot Chili Dip

1. Saute' onion and green pepper in oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1 tablespoon oil
- 10 ounce can Old El Paso tomatoes with green chilies
- 4 ounce can jalapeno peppers
- 16 ounce can whole tomatoes, chopped in blender or food processor
- dash salt
- dash garlic salt
- 1 Tablespoon mustard
- 8 ounce package cream cheese
- 2 pound box Velveeta Cheese, cubed
