Taste of Home Pumpkin Stew

In a Dutch oven, brown meat in 2 tablespoons oil
- 2 pounds beef stew meat, cut into 1-inch cubes
- 3 tablespoons canola oil, divided
- 1 cup water
- 3 large potatoes, peeled and cut into 1-inch cubes
- 4 medium carrots, sliced
- 1 large green pepper, cut into 1/2-inch pieces
- 4 garlic cloves, minced
- 1 medium onion, chopped
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 tablespoons beef bouillon granules
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 pumpkin (10 to 12 pounds)
French Dressing--no sugar

This is the healthier version of our family favorite french dressing
- 1/8 tsp Stevia
- 8 oz Tomato Sauce
- 1 tsp Mustard
- 2 Tbsp Cider Vinegar
- 2 Tbsp Lemon Juice
- 1/8 tsp Garlic Powder
- 1/4 tsp Celery salt
- 1 cup oil
Chicken with 40 Cloves of Garlic

Preheat the oven to 350 degrees F
- 2 tablespoons regular olive oil
- 8 chicken thighs (with skin on and bone in), preferably organic
- 1 bunch or 6 scallions
- 8-10 sprigs fresh thyme
- 40 cloves garlic (approximately 3 to 4 heads), unpeeled
- 2 tablespoons dry white vermouth or white wine
- 1 1/2 teaspoons kosher salt or 3/4 teaspoons table salt
- Good grinding pepper
Banana Split Cheesecake Bites (Or Banana Cheesecake Fudge!)

Blend everything together, very well
- 1/4 1/4 1/4 cup canned coconut milk (lite or regular)
- 2 2 2 tsp pure vanilla extract
- 1/3 1/3 1/3 cup mashed banana (measured after mashing)
- 1 1 1 to packet or 1 tablespoon sugar (or to taste)
- 1/16 1/16 1/16 tsp salt

- 1 16oz jar roasted almond butter, or allergy-friendly alternative
- 3/4 cup virgin coconut oil (120g)
- 1/2 cup cacao or cocoa powder (20g)
- 1/4 tsp salt (my almond butter was unsalted)
- 1 tsp pure vanilla extract

- 2 14-ounce cans COCONUT MILK (full fat) Thai Kitchen® works well or any high-fat coconut milk
- 1/4 cup cold WATER
- 1/2 teaspoon unflavored GELATIN
- 1 teaspoon pure VANILLA EXTRACT
- 1 teaspoon pure ALMOND EXTRACT (tames the coconut flavor)
- 1/4 cup liquified HONEY or agave (use liquid stevia to taste to make it sugar free)
