- 2 1/2 pounds thawed and drained boneless chicken thighs or breasts, cut into bite-size pieces
- 3/4 cup Trim Healthy Mama Baking Blend
- 1 tsp mineral salt
- 1/2 tsp black pepper
- 1 tsp Super Sweet Blend
- 5 to 6 TBSP Coconut Oil
- 1/2 cup soy sauce
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- 4 tsp super sweet blend
- 3 TBSP rice vinegar
- 4 TBSP water
- 1/2 tsp red pepper flakes
- 2 TBSP toasted sesame oil
- 3 green onions, diced
- 2 tsp orange extract
- 1/3 to 1/2 tsp Gluccie
- Optional:
- 1/2 head green cabbage, very finely sliced, or use some packaged coleslaw mix

Easy Pumpkin Mousse-THM

- KC added:
- 2-3 cups cooked pumpkin (or sweet potato)
- 1 can coconut milk
- 1/3 cup cacao (baking cocoa)
- 1/2 - 1 tsp gluccaminin powder if desired (to make mousse thick for a pie you must add gluccie)
- 1-2 tsp cinnamin
- 1/8 tsp each cloves, nutmeg, ginger
- 1 tsp vanilla
- 1/4 cup maple syrup (or use stevia for THM)
- Make a nut base if you want a pie:
- 1-2 cups almond/nut flour/meal
- 2-4 Tbsp butter/ghee/coconut oil, melted
