2 Ingredient Coconut Cookie Dough Balls!

- Triple recipe (2 dozen) Ingredient list:
- 2/3 cup pitted dates (80 g) (I like Sunmaid brand, because they’re softer.)
- 1 and 1/2 tbsp coconut butter or Homemade Coconut Butter
- Tiny pinch salt (can be omitted if desired)
- Optional: shredded coconut, chocolate chips, etc.
- 2 cup pitted dates (240 g) (I like Sunmaid brand, because they’re softer.)
- 4 and 1/2 tbsp coconut butter or Homemade Coconut Butter
- 2-3 pinch salt (can be omitted if desired)
Raw Chocolate Avocado Pudding

1. Throw these raw chocolate avocado pudding ingredients into a high-speed blender
- 1 medium avocado (ripe and at peak of perfection please!)
- 1/2 cup dates
- 2 1/2 tablespoons raw cocoa powder
- 1/4 cup water + 1/8 cup water
- 2 Tbsp honey or maple syrup (OR 1/8 tsp liquid stevia plus 2T water)
- 1/8 teaspoon sea salt
- NOTE: Didn't blend in my Vitamix. Next time I will soak the dates in the water first to soften them.
Turkey Stuffing

Mix all together. Put in greased crock pot
- 32 oz Pepperidge Farms stuffing mix
- 6 cups chicken broth
- 1 stick butter, melted
- 1-2 tsp sage, to taste
Healthy Shamrock Shakes

Blend in a blender until smooth
- 1 frozen large banana, as ripe as possible
- cacao nibs or chocolate chips
- 1/8 tsp to 1/4 tsp pure peppermint extract (I like 1/4 tsp)
- 2/3 cup to 1 cup milk of choice (For a super-rich shake, try full-fat canned coconut milk.)
- optional: 1/4 cup frozen spinach (If you can’t get on board with the greens-in-smoothies thing, you can opt for green food coloring or just drink a white mint shake. Or add a pinch of spirulina!)
Whipped Body Butter(Mint Chocolate)

"Mint chocolate chip ice cream
- Equipment:
- 1/2 cup cocoa butter
- 1/2 cup coconut oil
- 20 – 40 drops peppermint essential oil
- A stand mixer is the best tool for this recipe. I personally use my KitchenAid Classic Stand Mixer and its whisk attachment for whipped body butter recipes.
- A hand mixer will also work, but it may require a little more muscle and patience. A blender or food processor may not work because they will get too warm, which can prevent the oil from whipping up properly.

- 2 cups sliced onion (1 large)
- 20 oz peeled and cubed sweet potato
- 2/3 cup diced zucchini
- 1-2 cans black beans (or another bean)
- 28-oz can diced tomatoes
- 1 1/2 tbsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 2 tsp orange zest
- 1 cup water (or broth)
One-Pan Balsamic Chicken Veggie Bake-Whole 30

- 1 1/4 lbs. boneless skinless chicken breast, tenders or thighs (if large, cut in half)
- 3 small heads broccoli, chopped into pieces (about 4 cups)
- 3 medium carrots, peeled and cut into skinny sticks (about 1 1/2 cups)**
- 2 cups button mushrooms, halved if large
- 1 small red onion, diced
- 1/2 cup cherry or grape tomatoes

- 2-inch cube cacao butter (30 grams, or 2 tbsp after melting)
- scant 1/8 tsp pure vanilla extract
- stevia or powdered sugar to taste (2 tbsp if powdered sugar)
- 1 tbsp raw cashew or macadamia butter (can omit; it’ll just be less creamy) (15g)
- very tiny pinch salt

In a bowl, cover the nuts with water and let sit 6-8 hours
- Cookies:
- 1/2 cup raw cashew or macadamia nuts (60g)
- 2/3 cup milk of choice (160g)
- scant 1/8 tsp salt
- 2 tbsp sugar of choice or xylitol (24g)
- pinch pure stevia, or 1 extra tbsp sugar of choice
- 1 tsp pure vanilla extract
- 4-5 oreo cookies or Homemade Healthy Oreos
- 3/4 cup spelt flour (or all-purpose, or gluten-free all-purpose) (120g)
- 1/4 cup plus 2 tbsp dutch cocoa powder (30g) (regular cocoa is fine; they just won’t taste as authentic)
- 1/4 cup plus 2 tbsp xylitol or sugar (or coconut sugar or evaporated cane juice) (78g)
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp pure vanilla extract
- 1/4 cup vegetable or coconut oil (44g)
