Macaroni/Pasta Salad

adapted from Sue Gregg recipe
- Optional extras:
- 16 ounce macaroni noodles or rotini, cooked
- 1 sweet red pepper, chopped
- 1/4 cup sliced green onions (about 1 bunch)
- 2-3 carrots, chopped*
- 2 cup frozen peas*
- note: I sometimes use frozen carrot & pea mixture, about 3 cups combined
- 2 cup cheddar cheese, cubed or shredded
- 2/3 cup pickle relish (we prefer sweet, but can use dill)
- chicken, bacon, hard cooked eggs, celery
- Sauce:
- 1 cup mayonnaise
- 1 cup plain yogurt
- 1/4 cup lemon juice, or to taste
Paleo Meatloaf with Bison and Bacon

Preheat to 400°F. Melt butter in a large skillet
- 1 tablespoon butter, I prefer Kerrygold
- 1 onion, minced
- 6 cloves garlic, minced
- 1 yellow pepper, minced
- 2 lbs ground bison
- 4 ribs celery, sliced
- 1 tablespoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/4 cup coconut flour
- 2 eggs, beaten
- sea salt, to taste
- 6 oz tomato paste
- 10-12 slices bacon

- 4 cups coconut milk or other milk (See Easiest Homemade Coconut milk.)
- 1 cup sweetener of choice(see notes for sugar-free)**KC: I tried with stevia, but way too icy-- I may try using 1/2 cup maple syrup as sweetener
- 1 tsp vanilla
- 3/4 tsp peppermint extract
- 1 Tbsp gelatin, arrowroot, or cornstarch for creaminess (See Notes)
- 1/4 tsp salt
- 1 tsp dried parsley flakes (optional; for coloring)
- 3/4 cup chocolate/carob or mint chocolate/carob chips (for a “double mint” treat :-) (add more or less, to taste)

- Chocolate Cupcakes:
- 1 cup (2 sticks) salted butter (sub: oil?)
- 1 cup water
- 1/2 cup Unsweetened Cocoa powder (regular or dark)
- 2 cup sugar
- 2 large eggs
- 1 cup sour cream (sub: DF milk + 2 Tbsp white vinegar or DF plain yogurt?)
- 1 tsp GF pure vanilla extract
- 1 1/2 tsp GF baking powder
- 1 1/2 tsp GF baking soda
- 1/2 tsp salt
- 2 tsp xanthum or guar gum
- Artisanal GF Flour blend (2 1/2 cups):
- 1 3/4 cup Brown Rice Flour
- 1/2 cup Arrowroot Starch
- 1/4 cup Tapioca Starch

- 1 drained can of black beans OR
- 1 1/2 cups soaked & cooked Chana dahl or other beans
- 2 eggs + 4 egg whites OR 2/3 cup carton 100% egg whites

- 1 1/2 tsp baking powder
