Cinnamon Swirl Cheesecake-Chocolate Covered Katie

I slightly altered recipe by Chocolate Covered Katie
- Crust:
- 1/2 cup applesauce (120g)
- 1 1/2 cups raw cashews, soak (150g)
- 1/2 tbsp pure vanilla extract
- 3 tbsp virgin coconut oil (30g)
- 1/4 cup pure maple syrup OR pinch pure stevia plus 2 tbsp water
- 1/2 tsp salt (plus 1/8 tsp if needed)
- 2 tsp lemon juice
- 1 tsp cinnamon, divided
- 1/2 cup pitted dates
- 1/4 tsp cinnamon
- 1/2 cup almonds (80g)
- 1/16 tsp salt
- 1/4 tsp pure vanilla extract
- up to 1 tbsp water, if needed
Healthy Dark Chocolate Mints (Copycat Andes Mints)

NOTE: Important: I used Frontier flavoring oil which is mint oils diluted in a carrier (sunflower)
- For the chocolate layers:
- 1 1/4 cup chopped dark chocolate bar, or approximately 6 oz (or Enjoy Life chocolate chips)*If you want yours to taste closer to the real Andes, use milk or other lighter chocolate.
- 1/2 tbsp coconut oil (1 tbsp with chocolate chips)
- 1 - 2 tsp mint or peppermint flavoring oil* (Start with less and adjust to taste.)
- For the middle layer:
- 1/4 cup coconut butter, melted
- 3 tbsp coconut oil, melted (or cacao butter for smoother texture)
- 1/2 - 1 tbsp honey or maple syrup (optional)
- 1/8 - 1/2 tsp mint flavoring oil* (Start with less, adjust to taste.)
- dash salt (very small dash)
- Optional: 1/8 tsp vanilla extract
- Optional: 1/8 - 1/2 tsp spirulina and/or matcha powder
- OR 6-8 mint leaves (about 1/2 tbsp)**If using mint leaves, only add mint oil if needed to taste. The mint leaves give plenty of flavor on their own.

- 6 cups peeled and diced butternut squash
- 3 cups chicken stock
- 1 cup apple cider
- 2 medium apples, peeled and seeded
- 2 teaspoons curry powder
- 1 medium onion, diced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground nutmeg
- Sprinkle of pumpkin seeds or dollop of creme fraiche for garnish, if desired
Perfect Pot Roast (Paleo)

I love meat and I couldn't imagine a life without eating meat
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp cayenne pepper (*this will be too spicy for me, I will reduce or leave it out)
- 1 tsp paprika
- 2-3 pound chuck roast
- 2 Tbsp oil
- 4 large celery stalks, cut into 2-inch pieces
- 4 large carrots, cut into 2-inch pieces
- 1 large white onion, cut into 8 wedges
- a couple of cups of homemade beef stock (the recipe called for 1 cup chicken stock and 1 cup Marsala wine)

- 1/2 cup Tropical Traditions Coconut Oil
- 1/4 cup Cocoa Powder (raw cocoa powder is preferred)
- 2 Tbsp Organic Raw Honey (or sweetener of choice: maple, yacon powder, stevia), adjust according to taste
- 1 tsp vanilla extract (optional)
- Optional Ingredients
- 2 Tbsp of maca powder (mix in with the honey)
- 1 tsp orange rind (mix into the chocolate)
- seeds, nuts or dried fruit (sprinkle into the silicone trays)
- 1/4 cup dried coconut would be amazing… (mix into the chocolate)
THM-S Satisfying Granola

This is my variation of the recipe in Trim Healthy Mama book
- additional optional seasonings:
- 4 cups pumpkin seeds
- 2 cups Sunflower seeds
- 1/2 cup golden Flax Meal
- 1 cup shredded coconut
- 1-2 T Cinnamon, to taste
- 2-4 Tbsp coconut oil, melted
- 1 Tbsp pure vanilla extract
- 1 tsp vanilla stevia, or to taste (non-THM can use 2-4 Tbsp Honey or Maple Syrup instead of stevia)
- 1 tsp ginger
- 1/8 tsp nutmeg
- 1/8 tsp cloves
- 1/2 tsp sea salt

I begin by making my chia egg
- 3 Tablespoons Golden Flax Meal
- 1 Tablespoon protein powder of choice (I used Nutribiotics brown rice protein powder)
- 2 teaspoons Trim Healthy Mama Sweet Blend
- 3/4 teaspoon baking powder
- 1/2 teaspoon cinnamon (or to taste)
- pinch of salt
- 1 chia egg (3T hot water mixed with 1 T chia seeds, let set until gelled)
- 1 Tablespoon coconut oil

Wash, peel and chop your beet into 1-inch pieces
- 1 large beet
- 1 Tbsp. balsamic vinegar
- 1 can (15 oz.) chickpeas, drained
- 1 lemon, juiced, and 1 tsp. of lemon zest
- 3 cloves garlic
- 3 Tbsp. tahini paste
- 1 Tbsp. olive oil

Crust Directions: Make the crumbs in a food processor or put them in a heavy duty zip bag and crush finely
- The Crust Ingredients:
- 1/2 1/2 1/2 cp – Graham Cracker crumbs
- 2 2 2 tbls. – melted Butter
- 2 2 2 tbls. – Sugar
- The Filling Ingredients:
- 4 4 8 – 8 ounces Cream Cheese (at room temperature)
- 1/2 1/2 1/2 cup – Sugar
- 3 3 3 – large Eggs
- 1 1 to tbls – Lemon fresh squeezed (you may use any flavoring if you don’t wish to use lemon such as: Almond, Orange and Rum extracts)
- 1 1 1 tsp – grated Lemon Zest (optional)
- 1/2 1/2 1/2 tsp Vanilla Extract
- 2 2 2 tbls – of Flour if you want a richer and denser Cheesecake
- pinch pinch of Salt
- Tools:
- 1 1. 7” 6 will need a 7” spring form pan (if you have a 6 quart Instant Pot – this size will fit into it or you can use any pie dish that fits inside),
- 2 2. 2. Your trivet that fits in the bottom of your Instant Pot
