Green Bean Fries~THM-S

Adapted from recipe in both Trim Healthy Mama Cookbooks
- 2 16-oz bags frozen extra fine green beans
- 3-4 Tbsp butter or coconut oil (melted)
- mineral salt
- black pepper
- garlic powder (not in original recipe)
- cayenne pepper to taste (optional- we omit)
- 2 Tbsp nutritional yeast (we omit)
- 2-3 Tbsp finely grated Parmesan cheese (optional- omit for dairy-free)
Ice Cream Sandwich Pancakes

Mix dry ingredients very well, then add wet
- 1/4 cup spelt or all-purpose flour
- 1/4 tsp baking powder
- 1 tbsp Hershey’s Special Dark cocoa or dutch cocoa -(You can try substituting regular cocoa, but I have not tried)
- pinch uncut stevia OR 1 1/2 tbsp sugar
- 1/16 tsp salt
- 1 1/2 tbsp oil (or applesauce, only if you like the taste/texture of fat-free pancakes)
- 1 tsp pure vanilla extract
- 5 and 1/2 tbsp milk of choice
Chocolate Donuts or Waffles (THM-S)

Inspired by Muffin-in-a-mug recipe in Trim Healthy Mama book
- 2 eggs
- 1 tsp vanilla stevia, or to taste (6-8 droppers full)
- 2 Tbsp flax meal
- 2-4 Tbsp cacao powder, to taste
- 2 Tbsp coconut flour
- 1 tsp baking powder
- pinch of sea salt, to taste
- 2 Tbsp coconut oil, melted (or at least softened)
- 2-4 Tbsp coconut milk, adjust to get right consistency
Sage Multigrain Rice (InstantPot)

This is a gluten-free option that tastes like turkey stuffing
- 2 cups multigrain rice (I use Lundberg Jubilee)
- 1/2 tsp salt, or to taste
- 1/4 tsp pepper, or to taste
- 1-2 tsp sage(or poultry seasoning)
- 4 cups homemade chicken stock
Lentil Rice Casserole (Curry, Rice Cooker)

- 4 cups Chicken Broth
- 1 cup Lentils,dry
- 2/3 cup Brown Rice
- 1-2 tsp Salt, or to taste (depending on salt content of Broth)
- 1/2 tsp Black Pepper
- 2 tsp Curry Powder
- 1-2 tsp fresh minced garlic (or dried garlic)
- 1 cup onion or 1/4 cup dried minced onion
- 3 cups frozen Peas & Carrots
Paleo Mocha Frappuccino

Brew coffee. Pour a 1/2 cup into a blender or immersion blender cup
- 1/2 cup strong coffee
- 1/4 cup full-fat, unsweetened coconut milk, refrigerated (I used the solid part from the top of the milk, not the liquid part)
- 2 TBSP honey
- 1.5-2 cups crushed ice
- 1 TBSP cocoa powder
- 1/2 tsp vanilla
Wipe Your Mouth BBQ~THM-E

1. Place the chicken in the crockpot
- 2 1/2 lbs thawed and drained boneless, skinless chicken breasts
- 1 (14 oz) can diced tomatoes
- 4 tsp onion powder
- 2 tsp garlic powder
- 1 Tbsp tomato paste
- 3 Tbsp prepared yellow mustard
- 3 Tbsp apple cider vinegar
- 3 Tbsp paprika
- 1 tsp cayenne pepper or to taste (this makes a SPICY BBQ, try 1/4 tsp if can't abide heat)
- 3-4 tsp mineral salt
- 1 tsp black pepper
- 2 tsp liquid smoke
- 2 tsp blackstrap molasses
- 1 cup drained pineapple chunks
- 4 tsp Super Sweet blend, or 4 doonks pure stevia extract
Healthy Chocolate Frosting (or chocolate mousse!)

Maybe you’ve heard of the popular bakery, Sprinkles? At this bakery, they sell something known as a frosting shot
- 1 can full-fat coconut milk (or coconut cream)
- 1/4 cup plus 1 tbsp cocoa powder or cacao powder
- 1/2 tsp pure vanilla extract
- sweetener to taste (Use stevia or powdered sugar for thickest results.)

- 1/2 cup Coconut Oil, extra-virgin (or use refined for a neutral taste)
- 1/4 cup unsweetened cocoa powder
- 4 tsp Gentle Sweet or 2 tsp Super Sweet (Ground finely in coffee grinder)
- (KC: I add vanilla for better flavor)
