Crock Pot Rotisserie Chicken

Chicken broiled for color and then cooked in a crock pot will come out just like a rotisserie chicken
- 1 whole chicken
- 1/2 cup fat free chicken broth
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 bay leaves
- Salt, to taste
- Pepper, to taste
Easy Low Fat Pumpkin Sheet Cake

Pre-heat oven to 350 degrees; spray a 9×13 baking dish with non-stick cooking spray and set aside In a large bowl
- 1 15.25 box spice cake mix
- 1 15-ounce can pure pumpkin (not pumpkin pie mix)
- 1/2 cup water
- 1 1.4 box pumpkin spice instant pudding
- 1 cup light almond milk OR 1 1/4 cup skim milk
- 1 8-ounce container fat free cool whip
- Optional: Fall sprinkles and gingersnap crumbs
Steak Chili

1. Partially freeze meat. Slice cross grain into small, thin strips
- 1-1/2 pounds boneless beef top round steak
- 1 tablespoon cooking oil
- 2 medium onions, chopped (1 cup)
- 2 cloves garlic, minced
- 2 14-1/2-ounce cans diced tomatoes, undrained
- 1 cup beef broth
- 1 4-ounce can diced chili peppers, undrained
- 2 tablespoons chili powder
- 1 tablespoon brown sugar
- 2 teaspoons dried oregano, crushed
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 2 15-ounce cans pinto beans or red kidney beans, rinsed and drained
Skillet Chicken with Biscuit Dumplings

Saute chicken in butter with paprika
- 3 lbs chicken
- 1 tsp paprika
- 1/4 c butter
- 10 3/4 oz unsalted chicken stock
- 1 T minced onion
- 1/4 tsp sage
- 1/4 tsp rosemary
- 1/4 tsp thyme
- 1/8 tsp pepper
- 3 c thawed frozen peas
- 1 80z pkg biscuits
Lemon Vinaigrette

Combine in shaker bottle
- 2 T fresh lemon juice
- 1/2 t lemon zest (I usually use all the zest and juice from one lemon which ends up doubling the recipe)
- 1/3 C Sugar
- 2 T white wine vinegar
- 1 T Oil – I use Olive, but you can use whatever your preference is)
- 1 t Poppy seeds – I have omitted these at times can’t tell a difference
Eggnog Fudge

Line a 9x9 pan with foil. Spray with non stick cooking spray
- 1/2 Cup Butter
- 3/4 Cup Eggnog
- 2 Cups White Sugar
- 2 Cups White Chocolate Chips
- (1) 7 Ounce Jar Marshmallow Creme
- 2 Teaspoons Vanilla Extract
- 1/2 Teaspoon Nutmeg, Grated

- 1 7oz. bag Nacho Cheese Doritos, crushed
- 1 lb. hamburger, browned
- 1 pkg. taco seasoning, mixed according to directions
- 1 (8 oz.) pkg. shredded Cheddar cheese
- 1 (8 oz.) pkg. shredded Mozzarella cheese
- Shredded Lettuce
- Sliced tomato
Peppermint Poke Cake

1.Prepare cake according to box instructions in a 9x13" pan
- 1 box chocolate fudge cake mix and mix ingredients
- 2 (1.4 oz) package chocolate instant pudding
- 1 (8oz) cool whip
- 1/4 tsp peppermint extract
- 3 1/4 c cold Milk
- Andes peppermint crunch baking chips
Candy Cane Drop Cookies

- 2/3 cup sugar
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
