Carmelized Onion-Potato Gratin

1. Preheat oven to 375°. Combine first 4 ingredients in a small bowl
- 1 1/4 cups soft, fresh breadcrumbs
- 1/4 cup chopped fresh parsley
- 3 tablespoons grated Parmesan cheese
- 2 teaspoons lemon zest
- 3 tablespoons butter
- 2 large sweet onions, halved and thinly sliced
- 3 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 3 1/2 cups milk
- 1 3/4 teaspoons salt
- 1 1/2 teaspoons dried Italian seasoning
- 1/8 teaspoon ground red pepper
- 1 (8-oz.) package shredded Italian six-cheese blend
- 3 pounds baking potatoes, peeled and thinly sliced
Honey Mustard Marinade

Combine soy, oil, honey, mustard, tarragon, garlic, and pepper in medium bowl
- 1/2 c. soy sauce
- 1/3 c. vegetable oil
- 4 tsp. honey
- 3 tbsp. Dijon mustard
- 2 tbsp. chopped fresh tarragon leaves
- 4 medium garlic cloves, minced or pressed through garlic press (about 4 tsp.)
- 1 1/2 tsp. ground black pepper
- 1 tsp. cider vinegar
