Healthy Blueberrry and Banana Muffins

Preheat oven to 400°F. Line 12 muffin cups with paper liners
- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1/4 cup oat bran
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup mashed ripe bananas (about 3)
- 1/2 cup unflavored soy milk
- 1 large egg
- 2 tablespoons vegetable oil
- 2 teaspoons fresh lemon juice
- 1 1/2 cups fresh blueberries or 1 1/2 cups frozen blueberries, unthawed (6 to 7 ounces)

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder

- 1/2 pound spicy smoked sausage, cut into 32 (1/2-inch) pieces

Cold Cucumber Soup

- 2 canned chipotle chiles
- 2 tbsp. vegetable oil
- 2 c. shredded rotisserie chicken
- 3/4 c. low-sodium chicken broth
- 1/4 c. chopped fresh cilantro
- salt and pepper
- 15 (5-inch) corn tostadas or 8 cups corn tortilla chips, broken into 2-inch pieces
