Overnight Apple Oatmeal

- 2 small gala or fuji apples, cut into 1/2 inch pieces
- juice of 1/2 small lemon
- 4 cup water
- 1 cup steel-cut oats
- 1 (3 inch) cinnamon stick
- 1/2 tsp salt
- 1/4 cup packed brown sugar
- 1/4 cup low fat milk, warmed if desired
Stuffed Celery

- 1 large cream cheese
- 4 tablespoons pecans chopped
- 4 tablespoons onion finely chopped
- 4 tablespoons mayonnaise

Sweet Tea Mojito

Steep tea, sugar, and mint in 3 cups of simmering water for 5 minutes, stirring to dissolve sugar
- 4-5 Black Tea bags
- 2 cups tubinado sugar
- 2 handfuls of fresh mint
- 4 cups water
- 3 limes juiced
- 1 1/2 cup light rum
Satay lettuce wraps

Using a food processor, finely chop the peanuts
- 1/2 cup dry-roasted peanuts
- 2 tablespoons vegetable or peanut oil
- 1 1/4 pounds thinly sliced pork or chicken cutlets or 1 1/2 pounds ground pork or chicken
- Pepper
- 1/4 pound oyster, baby white or shiitake mushrooms, chopped or thinly sliced 1 bunch scallions, chopped or thinly sliced
- 4 cloves garlic, chopped
- One 1 1/2-inch fresh ginger, cut into thin matchsticks or finely chopped
- 2 tablespoons creamy peanut butter
- 1/2 cup unsweetened apple juice or chicken stock
- 1/4 cup tamari sauce, eyeball it
- Hot sauce, to taste
- 1 head iceberg lettuce, core removed, quartered
Watermelon Sours

Puree watermelon, strain, and stir in liqueur, gin, and sour mix
- 4 cups watermelon chunks
- 4 oz Alize Red Passion or other fruit flavored liqueor
- 8 oz gin
- 2 cup sour mix
- sparkling rose

Roast Chicken with WIlted Butter Lettuce and Peas

1. Preheat the oven to 350 degrees
- Chicken:
- 1 3-4 lb chicken rinsed and patted dry
- 1 lemon, halved
- 1 head of garlic halved crosswise
- 1/2 bunch fresh thyme
- 4-6 bay leaves
- EVOO
- s&p
- Lettuce and Peas:
- 1 cup dry white wine
- 1/4 red onion finely chopped
- 1 bay leaf
- 6 black peppercorns
- 4 Tbsp cold unsalted butter cut into cubes
- 1 cup frozen peas
- 1 large head of butter lettuce, leaves separated
- freshly ground pepper
Pork with Roasted Lemon-Apple Relish

- * 2 pounds boneless pork loin roast, tied
- * 3 tablespoons extra-virgin olive oil
- * Salt and pepper
- * 1 lemon, thinly sliced crosswise and seeded
- * 1 red onion, thinly sliced
- * 1/2 teaspoon sugar
- * 1/2 cup apple juice
- * 1/4 cup raisins
- * 1 green apple, cored and cut into 1-inch cubes
- * 1 teaspoon sherry vinegar
Lime-in-the-coconut chicken

- 3 cloves garlic, crushed
- 3 tablespoons chopped ginger
- 1 cup chopped scallions, white and green parts
- 1 cup cilantro
- 1/4 teaspoon cayenne
- 1/3 cup honey
- 1 cup coconut milk
- 1/3 cup lime juice, plus 1 tsp. grated zest
- 10 skin-on chicken drumsticks
Curried Apple and Winter Squash Soup

1) spray large saucepan and set over medium heat
- 1 red onion, finely chopped
- 1/2 fennel bulb, finely chopped
- 1 shallot, finely chopped
- 2 tsp curry powder
- 1 20oz bag peeled and cut up butternut squash, cut into 1 in cubes
- 1 32oz carton low sodium chicken broth
- 2 green apples, peeled and chopped
- 1/2 tsp salt

- 2 tablespoons all-purpose flour 2 teaspoons chopped fresh oregano, plus more for garnish
- 2 tablespoons chopped fresh parsley

- 4 tablespoons unsalted butter
- 1/2 pound thin green beans or haricots verts
