Cherry Shortcakes

Position a rack in the center of the oven; preheat to 400 degrees
- 4 cups fresh sour or sweet cherries, stemmed and pitted
- 1/2 cup plus 1 tbsp. sugar
- 2 cups cake flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small pieces
- 1 pint heavy cream
- 1/2 teaspoon pure vanilla extract
shaved cauliflower gratin

in large skillet, melt butter over medium-high heat
- 3 TBsp butter
- 6 chopped shallots
- 2 cups shredded gruyere (approx 8 oz)
- 1 cup heavy cram
- 1/4 cup chopped chives
- 1 tsp celery salt
- 1/4 tsp salt
- 1 thinly sliced 3 lb head cauliflower
Rosemary Chicken w/ Wild Rice

Cook rice as directed. Heat oil in skillet
- 1 c wild rice
- 1 T olive oil
- 1 1/4 lb skinless ckn breast cubed
- 2 carrots diced
- 1 T dried rosemary leaves
- 1/4 c + 2 T reduced cal. Orange marmalade
- 1/4 c Dijon
- 1/4 tea garlic powder
- 1/8 tea pepper
Taco Chili

Cook the ground round with the onion in a Dutch oven
- 8 oz lean ground round
- 1 small onion
- 1 28-oz can crushed tomatoes
- 2 14-oz cans diced tomatoes
- 2 15-oz cans red kidney beans or pinto beans, rinsed and drained
- 1 15.25-oz can corn, drained
- 1 can water (use the corn can)
- 1 4.5 oz can diced green chiles
- 1 pkg dry Ranch dressing mix
- 1 pkg taco seasoning mix

In a large nonstick skillet, bring 2 cups water to a boil over medium-high heat
- 2 6 oz bags spinach
- 8 eggs
- 3 tbsp EVOO
- 4 large tortillas

- 11/2 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 6 tablespoon unsalted butter, softened
- 3/4 cup packed light br sugar
- 1/2 cup sugar
- 1 large egg
- 2 teaspoon vanilla
- 21/2 cups, oats, I used old fashion whole oats
- 1 cup dried blueberries
- 1 cup pecans chopped

1. If using eggs, place in a small saucepan and cover with cold water
- 1 . 2 eggs (optional)
- 2 . 1 pound lean ground beef or ground turkey breast

Apple Pie

1. Position a rack in the middle of the oven and preheat to 400°
- * 6 granny smith apples (2 1/2 to 3 pounds)—peeled, quartered and sliced 1/3 inch thick
- * 2 1/4 cups plus 2 tablespoons flour
- * 1 cup plus 2 teaspoons sugar
- * 1 tablespoon fresh lemon juice
- * 3/4 teaspoon ground cinnamon
- * 1 egg, separated, white beaten slightly
- * 1/3 cup ice water, plus more if necessary
- * 1/2 teaspooon salt
- * 1/3 cup chilled vegetable shortening, cut into smaller pieces
- * 6 tablespoons unsalted butter, chilled and cut into small cubes
Baked Lemon Chicken

- 4 cloves of garlic
- 1/2 medium onion
- 1 green onion
- 1 potato chopped into small cubes
- 1 bag frozen corn, or 4 ears of fresh
- 3 cups of chicken stock
- 1.5 cups of fat free half and half or evaporated skim milk
- 3-4 Tbsp of corn starch dissolved in 1/4 cup stock (slurry)
