Artichokes Au Gratin

1. Preheat oven to 350. Brush 9 in square baking dish with OO and sprinkle with 2 Tbsp of breadcrumbs

Spice-Baked Apples

- 1 cup stone ground grits
- 1 tsp salt
- 3/4 cup grated sharp cheddar cheese
- 1/4 cup grated parm
- 3 Tbsp butter
- 1/2 tsp freshly ground pepper
- 1/2 tsp tabasco

- 1/2 cup apple cider
- 1/2 cup water
- zest and juice of 1 lemon
- 1 tsp ground allspice

Pear-Cheddar Turnovers with Hot Bacon and Spinach Salad

- 4 slices bacon, thinly slice crosswise
- 1 bosc pear- peeled, cored, and cut into 1/2 inch pieces
- 3/4 cup grated cheddar cheese ( about 2 1/2 oz)

- 1 frozen puff pastry sheet, thawed
- 1 1/2 tbsp heavy cream
- one 5oz bag baby spinach
- 1/4 red onion, thinly sliced

Ham and Fresh Peach Chutney on Corn Bread

To Make Corn Bread: Preheat oven to 375°F
- For Corn Bread:
- 1/2 * 1/2 cup all-purpose flour
- 1/2 * 1/2 cup yellow cornmeal
- 3/4 * 3/4 teaspoon baking powder
- 1 * 1 teaspoon salt
- 1 * 1 cup grated Sharp Cheddar
- 1 * 1 large egg
- 2 * 2 tablespoons unsalted butter, melted and cooled
- 1/2 * 1/2 cup sour cream
- 1/4 * 1/4 cup milk
- 24 * 24 slices cured ham such as Westphalian or prosciutto, or cooked country ham such as Smithfield
- 1/2 * about 1/2 cup fresh peach chutney
- FRESH PEACH CHUTNEY
- 1 * 1 firm-ripe peach
- 1/4 * 1/4 cup golden raisins, chopped fine
- 1 * 1 fresh serrano or jalapeño chili, seeded and chopped fine (wear rubber gloves)
- 1 * 1 tablespoon finely chopped, peeled fresh gingerroot
- 1 1/2 * 1 1/2 teaspoons finely chopped shallot
- 1/4 * 1/4 teaspoon ground cumin
- 1 * 1 tablespoon sugar
- 1 * 1 tablespoon fresh orange juice
- 1 * 1 teaspoon fresh lemon juice
