*Chicken and Dried Cherries

Prepare the couscous according to package instructions
- One 10-ounce box couscous
- 2 tablespoons flour
- 1 1/2 teaspoons curry powder
- Salt
- 3/4 pound skinless, boneless chicken thighs, cut into cubes
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil
- 1 small onion, thinly sliced
- 2 ribs celery, sliced, plus chopped leaves for garnish
- 1/4 cup chopped dried cherries
- 1/3 cup evaporated milk
Apple Berry Salsa

Preheat oven to 475. Lightly brush tortillas with water
- Chips:
- 6-8 large flour tortillas
- water
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- Salsa:
- 2 medium granny Smith apple
- 1 cup strawberries
- 1 kiwi fruit
- 1 small orange
- 2 tablespoons brown sugar
- 2 tablespoons apple jelly
Asian Sauce

Saute garlic in oil. Add all and simmer until thick
- 3 garlic cloves finely chopped
- 1 Tbsp oil- canola, olive, or sesame
- 1/4 cup soy sauce
- 2 Tbsp fish sauce
- 1 Tbsp Sambal chili garlic sauce
- 4-5 Tbsp splenga
- 5-6 shaves of carrot
- 1/4 cup of chicken stock with 1-2 Tbspn of corn starch
Yakitori Salmon & Bok Choy Skewers

Heat grill to medium-high; brush grate with oil
- 1/3 cup reduced-sodium soy sauce
- 2 teaspoons brown sugar
- 2 teaspoons grated fresh ginger
- 2 teaspoons dijon mustard
- 1 pound skinless salmon fillet, cut into 1 1/2-inch cubes
- 4 baby bok choy, halved lengthwise
Crunchy Turkey Salad Sandwiches

- 1 1/3 pound smoked turkey breast, diced
- 1 cup chopped scallions
- 3/4 cup chopped celery
- 1/3 cup mayo
- 2 Tbsp dijon
- 1 cup halved seedless red grapes
- 8 oz provolone cheese in 1/2 in cubes
- 1/2 cup sliced almonds toasted and coarsely chopped
- 3 Tbsp chopped fresh parsley

Apple Tarte Tatin

In a 9-inch cast-iron skillet, melt 4 tablespoons butter over medium heat
- * 4 tablespoons butter
- * 1/2 cup sugar
- * 10 peeled, cored and halved gala apples
- * 1 sheet of puff pastry
- * 1 cup heavy cream
Roasted Red Onions

- 2 lbs unpeeled red onions
- 1/4 cup olive oil
- 1 tsp sweet smoked paprika
- pinch salt

Cheese Ball

- 16 ounces Cream cheese softened
- 1 cup Cheddar cheese grated
- 1 package Ham chopped fine
- 4 Green onion chopped fine
- 1 teaspoon Garlic Powder
- Black pepper coarsely ground
- Pecans chopped fine
Spicy Roasted Corn

Bring water, milk , and salt to boil in a pot
- 2 cup water
- 1 cup milk
- pinch salt
- 4 ears of corn
- 4 Tbsp butter
- 2 tsp Old Bay seasoning
- dash green hot sauce
Sausage-and-Broccoli Rabe Stoup

Bring a medium pot of water to a boil, salt it, add the broccoli rabe and boil for 3 minutes
- Salt and pepper
- 1 large head broccoli rabe, cut into 2-inch pieces
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 pound bulk hot or sweet Italian sausage
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 1/8 teaspoon freshly grated nutmeg
- One 32-ounce container (4 cups) chicken stock
- One 28-ounce can stewed or diced tomatoes, with their juices
- One 15-ounce can white beans, rinsed
- 1 1/2 cups small, short-cut orecchiette pasta
- Grated pecorino-romano cheese, for topping
