In a small bowl, cream butter and confectioners' sugar until light and fluffy
- 1 cup butter, softened
- 1 cup confectioners' sugar
- 1 egg
- 1 1/1 tsps rum extract
- 2 1/2 cups all-purpose flour
- 1/4 tsp salt
- colored sugar
BREAKFAST EGG BAKE

1. Rinse and dry leek rings
- 3 3 3 cups leaks, sliced into rings
- 1 1 1 large onion, diced
- 2 2 2 Tbsps olive oil
- 1 1 1 # ground pork breakfast sausage
- 8 8 8 strips bacon
- 12 12 12 large eggs
- 1 1 1 cup heavy cream
- 1/2 1/2 1/2 cup Frank's RedHot Original Cayenne
- Pepper Sauce
- 1 1 1 tsp garlic powder
- 1 1 1 large baguette loaf
- 2 2 2 cups shredded sharp Cheddar cheese
- 2 2 2 cups shredded Pepper Jack cheese
- to and pepper, to taste
SUGAR COOKIES

In a large bowl, cream butter and sugar until light and fluffy

- 1 egg
- 1 teaspoon vanilla extract
- 2-1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Additional sugar
CHAMPAIGN HAM (PHYLLIS SEIFERT, SUE'S MOM)

Bring to a boil and boil 5 minutes
- Cooked, boneless ham, sliced, put in roaster and add sauce:
- 1 cup sugar
- 1 cup water
- 1/2 cup cider vinegar
VEGGIE CHOWDER

In a large saucepan, combine potatoes, broth, carrots and onion; bring to a boil
- 2 cups cubed peeled potatoes
- 2 cups reduced-sodium chicken broth
- 1 cup chopped carrots
- 1/2 cup chopped onion
- 1 can (14-3/4 ounces) cream-style corn
- 1 can (12 ounces) fat-free evaporated milk
- 3/4 cup shredded reduced-fat cheddar cheese
- 1/2 cup sliced fresh mushrooms
- 1/4 teaspoon pepper
- 2 tablespoons bacon bits
APPLE WALNUT PIE

Preheat oven to 350 degrees
- Topping:
- 1 unbaked 9-inch pie crust
- 2 1/2 pounds Golden Delicious apples, peeled, cored, and thinly sliced (about 5 to 6 medium)
- 2 Tbsps fresh lemon juice
- 1/2 tsp grated lemon zest
- 1/2 tsp ground nutmeg
- 1 1/4 tsps ground cinnamon
- 1 cup sugar
- 3 Tbsps cornstarch, blended with 1/4 cup cold water
- 3/4 cup all-purpose flour
- 3/4 cup dark brown sugar, firmly packed
- 3/4 cup walnuts, chopped
- 1/2 cup (1 stick) unsalted butter, at room temperature
SPICY SHRIMP KABOBS WITH PINEAPPLE & ONIONS

In a large resealable plastic bag, combine the first seven ingredients
- 1/4 cup tomato sauce
- 2 tablespoons minced fresh basil or 2 teaspoons dried basil
- 2 tablespoons red wine vinegar
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 pound uncooked medium shrimp, peeled and deveined
- 1-1/2 cups pineapple chunks
- 1 medium onion, cut into wedges
CHICKEN BROCCOLI CORDON BLEU

Place chicken between 2 pieces of plastic wrap
- 2 whole chicken breasts, split, skinned and boned (about 1 pound boneless)
- 4 thin slices (1 ounce each) fully cooked ham
- 4 thin slices (1 ounce each) Swiss cheese
- 2 Tbsps vegetable oil
- 1 can (10 3/4 ounces) condensed cream of broccoli soup
- 1/3 cup milk
- 1/4 cup sliced green onions
- 1/8 tsp dried thyme leaves, crushed
CHOCOLATE SYRUP (SUGAR-FREE)

In a heavy saucepan, combine cocoa powder, cinnamon and water
- 3 ⁄4 cup unsweetened cocoa powder
- 1 pinch cinnamon
- 1 1⁄4 cups water
- 1 teaspoon vanilla extract
- 1 ⁄2 cup artificial sweetener (such as Splenda)
CRACKLE COOKIES

- 1 cup sugar
- 1/4 cup canola oil
- 2 eggs
- 2 ozs unsweetened chocolate, melted and cooled
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- Confectioners' sugar
