PEACH-GLAZED MEATBALLS

In a large bowl, combine the eggs, water chestnuts, bread crumbs and bouillon
- 2 eggs, lightly beaten
- 1 can (8 ounces) water chestnuts, drained and chopped
- 3/4 cup dry bread crumbs
- 1 tablespoon beef bouillon granules
- 1-1/2 pounds ground beef
- 1 jar (16 ounces) peach preserves
- 1 bottle (12 ounces) chili sauce
- 1 envelope onion soup mix
ITALIAN SHRIMP & PASTA

In a large skillet, saute garlic in oil for 1 minute or until crisp-tender
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 1/2 cup chicken broth
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon pepper
- 1 pound uncooked medium shrimp, peeled and deveined
- 6 ounces uncooked angel hair pasta

Mix butter, powdered sugar and vanilla together thoroughly
- 1 cup soft butter
- 1/2 cup sifted powdered sugar
- 1 tsp vanilla
- 2-1/4 cups sifted flour
- 1/4 tsp salt
- 3/4 cup finely chopped nuts
CHARLIE'S FAMOUS CHICKEN SALAD WITH GRAPES

- 2-1/2 cups diced cooked chicken
- 1 cup finely chopped celery
- 1 cup seedless grapes, halved
- 1 cup chopped walnuts or 1 cup pecans
- 1 small minced onions
- 1/2 tsp salt
- 1 tsp Worcestershire sauce
- 1/2 cup Mayo
APPLE PIE SMOOTHIE

Method Place all ingredients in a blender and purée until smooth, 30 to 60 seconds
- 1 cup unsweetened almond milk
- 1 cup unsweetened applesauce or stewed apples

- 4 cups diced peeled potatoes (1-3/4 pounds)

- 2 cups (8 ounces) shredded cheddar cheese
- 1-1/2 cups milk
- 3/4 teaspoon salt
- 1/4 to 1/2 teaspoon pepper
- 1/4 cup sour cream

- 2 tsp Worcestershire sauce
- 1 egg, beaten
- 1/2 cup Italian bread crumbs
- 1/4 cup grated Parmesan, Parmigiano-reggiano or Romano cheese
- 2 cloves garlic, chopped
- Salt and pepper
- SAUCE:
- 2 Tbsps extra-virgin olive oil
- 1/2 tsp crushed red pepper flakes
- 4 cloves garlic, crushed or chopped
- 1 small onion, finely chopped
- 1 cup beef stock
- 1 (28-oz) can crushed tomatoes
- Handful chopped flat-leaf parsley
- 10 leaves fresh basil leaves torn or thinly sliced
- Grated cheese for passing at table.
