NEW POTATOES AND PEAS IN CHEDDAR SAUCE

Bring potatoes and chicken broth to a boil in a 3-quart saucepan
- 12 small to medium-sized red-skinned new potatoes (about 2 pounds) scrubbed and cut into 1-inch pieces (7 cups)
- 3 cups chicken broth
- CHEDDAR CHEESE SAUCE
- 2 Tbsps butter
- 2 Tbsps all-purpose flour
- 2 tsps dry mustard
- 1/8 tsp ground red pepper
- 1 tsp salt
- 1 cup milk
- 2 cups frozen petite green peas
- 1 cup shredded Cheddar cheese (4 ounces)
TORTELLINI ALFREDO

Cook tortellini according to package directions
- 2 packages (9 ounces each) refrigerated cheese tortellini
- 1/2 cup chopped onion
- 1/3 cup butter, cubed
- 1-1/2 cups frozen peas, thawed
- 1 cup thinly sliced fresh mushrooms
- 1 cup cubed fully cooked ham
- 1-3/4 cups heavy whipping cream
- 1/4 teaspoon coarsely ground pepper
- 3/4 cup grated Parmesan cheese
- Shredded Parmesan cheese, optional
MASHED SWEET POTATOES WITH PECAN BUTTER
