PECAN PIE (Rachel Ray)

Place a rack in the center of the oven and preheat to 350 degrees
- 1 1/2 cups flour
- 1/3 cup plus 1 Tbsp vegetable oil
- 3 Tbsps milk
- 1/2 tsp salt
- 3 Tbsps unsalted butter, melted
- 3/4 cup sugar
- 3/4 cup dark corn syrup
- 3 large eggs
- 2 Tbsps plus 1-1/4 tsps vanilla
- 1-1/2 cups coarsely chopped pecans

Grate potatoes and onion in your food processor, or on the fine side of a hand grater
- 5 large potatoes, peeled
- 1 large onion
- 4 eggs
- 1/3 cup of matzo meal
- 1 tsp salt
- 1/4 tsp black pepper
- 1/3 cup vegetable oil for frying
SPLIT BISCUIT CHICKEN PIE

- 2 1/2 cups whole milk
- 1 tablespoon chicken bouillon granules
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 4 cups cooked diced chicken
- 1 cup frozen green peas, thawed
- 1 pkg. (6 oz) refrigerated biscuits
CHUNKY BLUE CHEESE DRESSING

- 1/2 packet (1 tablespoon) Picnic Salad Seasoning Mix

- 2 ounces cream cheese

- 7 ounces heavy whipping cream
- 2 cups espresso or strong coffee
- 1/2 cup warm water

- 1/4 tsp salt
- 1 can (8 ounces) tomato sauce

- 1-1/2 cups low-fat milk
