EGG SALAD AND CUCUMBER SANDWICHES

In a small bowl, combine the first five ingredients
- 1/2 cup chopped red onion
- 3/4 cup mayonnaise
- 2 Tbsps Dijon mustard
- 1/2 tsp pepper
- 1/4 tsp salt
- 8 hard-cooked eggs, chopped
- 1 large cucumber, sliced
- 1 Tbsp dill weed
- 12 slices bread, toasted
PORK SOUVLAKI WITH HONEYED APRICOTS

- For the Souvlaki:
- 2 shallots, minced
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh oregano
- 1 jalapeno pepper, seeded and minced
- Juice of 1 lemon
- 1/2 cup extra-virgin olive oil
- 2 pounds pork tenderloin, trimmed and cut into 1 1/2-to-2-inch chunks
- For the Apricots:
- Juice of 3 limes
- 3/4 cup dry rose or white wine
- 1/4 cup honey
- 1 shallot, minced
- 12 plump dried apricots
- 1 tablespoon chopped fresh mint
- 1 tablespoon pine nuts, toasted
- Greek yogurt, for serving
CHICKEN KEBABS IN LETTUCE CUPS

1. Soak eight wooden skewers in water, 15 minutes

- 1/4 cup unsweetened cocoa powder
- 1 tsp vanilla
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 cup toasted almonds, pecans or walnuts
- 4 oz. semisweet chocolate squares
OVEN BAKED CHICKEN

Preheat oven at 325 degrees
- 4 split chicken breasts
- 5 Tbsps milk
- 1 cup unseasoned bread crumbs
- 1/2 tsp onion powder
- 1/2 tsp garlic salt
- 1/2 tsp paprika
- 1/8 tsp salt
- 1/2 tsp pepper
- 2 Tbsps butter
BEST BEEF ENCHILADAS

The Beef Enchilada filling is also great used with tortilla chips to make nachos
- BEEF ENCHILADA FILLING:
- 1 pound ground beef
- 1 yellow onion, finely chopped
- 3 TBs vegetable oil
- 3 cloves garlic, minced
- 2 1/4 tsp ground cumin
- 3 TBs dried oregano
- 1 cup tomato sauce
- 1 tsp salt
- ENCHILADA SAUCE:
- 2 cups chicken broth
- 4 TBs Gebhardt Chili Powder, or other chili powder
- 1 tsp ground cumin
- 2 heaping tsp garlic powder
- 3/4 tsp salt
- 1 pinch ground cinnamon
- 1/3 tsp sugar
- 5 TBs cold water
- 5 TBs flour
CHOCOLATE MOUSSE #2

Melt chocolate in top of double boiler over barely simmering water
- 6 squares (1 oz each) semisweet chocolate
- 4 eggs, separated
- 2 to 3 Tbsps amaretto-flavored OR Irish cream liqueur
- 3 Tsps sugar
MAKEOVER RIGATONI WITH BACON & ASPARAGUS

Cook pasta according to package directions
- 1 package (16 ounces) spiral pasta
- 1 pound fresh asparagus, trimmed and coarsely chopped
- 8 bacon strips
- 1 garlic clove, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2/3 cup half-and-half cream
- 1/2 cup shredded part-skim mozzarella cheese
- 1/2 teaspoon salt
- 1/4 cup minced fresh parsley
- 1/8 teaspoon coarsely ground pepper
- 1/4 cup grated Parmigiano-Reggiano cheese
SECRET RECIPE CHOCOLATE CHIP COOKIES

- 1/2 cup rolled oats, regular or quick
- 2 1/4 cups all-purpose flour
- 1 1/2 tsps baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 cup (2 sticks) butter, softened
- 3/4 cup firmly packed brown sugar
- 3/4 cup sugar
- 2 tsps vanilla
- 1 tsp lemon juice
- 2 eggs
- 2 cups semisweet chocolate chips
- 1 1/2 cups chopped walnuts
SLOW-COOKED HAM WITH PINEAPPLE SAUCE

- 1 can (20 ounces) unsweetened crushed pineapple, undrained
