FRESH LEMON MERINGUE PIE

Combine sugar, cornstarch and salt
- FRESH LEMON MERINGUE PIE
- 1 1/2 cups sugar
- 1/4 cup + 2 Tbsps cornstarch
- 1/4 tsp salt
- 1/2 cup fresh lemon juice
- 1/2 cup cold water
- 3 large egg yolks, well beaten
- 2 Tbsp butter
- 1 1/2 cups boiling water
- 1 tsp grated lemon peel
- PASTRY
- 1 cup flour, unsifted
- 1/2 tsp salt
- 1/3 cup + 1 Tbsp shortening
- 3 Tbsp ice water
- BAKE 8-10 minutes at 450 degrees
- MERINGUE
- 3 large egg whites at room temperature
- 1/4 tsp cream of tartar
- 6 Tbsps sugar
- Beat eggs and tartar until frothy. Gradually beat in sugar, 2 tablespoons at a time. Beat on high until stiff peaks form. Spread over filling. Beat at 400 degrees 6 to 8 minutes.
SIMPLE SHRIMP SCAMPI

In a large skillet over medium heat, melt butter
- 3/4 cup butter, cubed
- 2 pounds uncooked medium shrimp, peeled and deveined
- 5 teaspoons lemon-pepper seasoning
- 2 teaspoons garlic powder
- 1/3 cup dry white wine
- Lemon wedges, optional
CHOCOLATE PUDDING CAKE

Combine first 5 ingredients in a 9-inch square baking pan and stir well
- 1 cup all-purpose flour
- ¾ cup sugar
- 2 Tbsps unsweetened cocoa
- 1 ½ tsps baking powder
- ¼ tsp salt
- ½ cup 1 % low-fat milk
- 2 Tbsps vegetable oil
- 1 tsp vanilla extract
- 1 cup firmly packed brown sugar
- ¼ cup unsweetened cocoa
- 1 ¾ cups boiling water
GROUND BEEF QUICHE

Brown hamburger with a little garlic salt and set aside
- 3/4 pound hamburger
- 5 eggs
- 1/2 cup mayonnaise
- salt and pepper to taste
- 1 9” pie crust
- 1/2 cup milk
- 1 cup Swiss cheese
- 1 cup Cheddar cheese

CHICKEN & ASPARAGUS BUNDLES

Flatten chicken breasts slightly
- 4 boneless, skinless chicken breast halves (1 pound)
- 20 fresh asparagus spears (about 1 pound) trimmed
- 4 1/2 tsps olive oil
- 2 tsps lemon juice
- 1/2 tsp dried basil
- 1/4 tsp dried thyme
- 1/4 tsp pepper
- 1/8 tsp salt
- 1/4 cup chopped green onions
- 2 tsps cornstarch
- 1 cup fat free chicken broth
MICROWAVE LASAGNA

Open spaghetti sauce jar and stir in oregano, basil and garlic
- 1 jar (32 oz) spaghetti sauce with meat
- 1 tsp each oregano leaves and dry basil
- 1 clove garlic, pressed
- 1/4 cup water
- 1 package lasagna noodles
- 1/2 pound lean ground beef
- 3 cups shredded cheddar or jack cheese
- 1 cup ricotta cheese
- 1 pkg (8 oz) mozzarella cheese, thinly sliced
- Grated Parmesan cheese
PARTY MEATBALLS RECIPE

1. In a large bowl, combine the first eight ingredients
- SAUCE:
- 2 eggs, lightly beaten
- 1 can (12 ounces) evaporated milk
- 2 cups quick-cooking oats
- 1 cup finely chopped onion
- 2 teaspoons salt
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 3 pounds ground beef
- 2 cups ketchup
- 1-1/2 cups packed brown sugar
- 1/2 cup chopped onion
RICE KRISPIE TREATS

1) Melt margarine in large saucepan over low heat
- 6 cups KELLOGG’S RICE KRISPIES cereal
- 3 tablespoons margarine or butter
- 1 package (10 oz, about 40) regular marshmallows or 4 cups miniature marshmallows
PUMPKIN BARS

Combine flour, baking powder, cinnamon, soda and 1 tsp salt
- 2 cups flour
- 2 tsps baking powder
- 2 tsps ground cinnamon
- 1 tsp baking soda
- 4 eggs
- 1 16-oz can pumpkin
- 1-2/3 cups sugar
- 1 cup cooking oil
- 1 cup chopped pecans
- 1 recipe Cream Cheese Frosting (see directions)
