MOCHA PUDDING CAKES

In a small bowl, combine the flour, sugar, cocoa, baking powder and salt
- TOPPING:
- 1/4 cup all-purpose flour
- 3 tablespoons sugar
- 1-1/2 teaspoons baking cocoa
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 3 tablespoons 2% milk
- 1-1/2 teaspoons butter, melted
- 1/4 teaspoon vanilla extract
- 2 tablespoons brown sugar
- 1-1/2 teaspoons baking cocoa
- 3 tablespoons hot brewed coffee
- 1 tablespoon hot water
- Whipped topping, optional
BEEF & BROCCOLI WITH BROWN RICE

- 1 Tablespoons vegetable oil
- 1/2 pound beef sirloin steak, sliced 1/4” thick
- 2 cloves garlic, minced

Preheat oven to 350F. Peel the sweet potatoes and cut them into 2-inch chunks
- 2 1/2 pounds sweet potatoes
- 1/2 cup milk
- 1/3 cup maple syrup
- 1 large egg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- Zest from 1 medium orange
- 3/4 cup chopped pecans
- 1/2 cup all-purpose flour
- 1/2 cup dark brown sugar
- 4 tablespoons unsalted butter, softened to room temperature

TEXAS BROWNIES

In a large mixing bowl, combine the flour and the sugar
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 stick butter
- 1/2 cup shortening
- 1 cup strong brewed coffee or water
- 1/4 cup dark, unsweetened cocoa
- 1/2 cup buttermilk
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla
- FROSTING
- 1 stick butter
- 2 Tbsp dark cocoa
- 1/4 cup milk
- 3-1/4 cups unsifted powdered sugar
- 1 tsp vanilla
ANGEL HAIR PASTA WITH SHRIMP & LEMON CREAM SAUCE

Method 1 Bring a large pot of salted water to a boil
- 3/4 cup heavy whipping cream
- 1/4 cup chicken stock
- 3 Tbsp lemon juice
- 3/4 pound angel hair pasta (also called capellini)
- Salt and black pepper
- 1 pound raw medium shrimp, peeled and deveined*
- 1/2 cup (loosely packed) chopped parsley
- 1/4 cup (loosely packed) chopped chives
- Zest of a lemon
- 1/2 cup freshly grated parmesan cheese
TACO SOUP

Cook hamburger and onion. Drain
- 1 28-oz can Diced Tomatoes
- 1 28-oz can Kidney Beans
- 1 16-oz can whole kernel corn
- 1 packet taco seasoning or Chipotle seasoning
- (I make my own taco seasoning)
- 1 to 1-1/2 pounds hamburger
- 1/2 chopped onion
- I also add a little hot pepper sauce for more flavor
CURRIED SHRIMP AND RICE

Heat 1/2 tsp oil in large non-stick skillet over medium-high heat
- 1/2 tsp vegetable oil
- 1 pound medium-sized fresh, peeled, deveined shrimp
- 1 1/2 tsps curry powder
- 1/2 cup low-sodium chicken broth
- 1 (16-oz) bag frozen broccoli, cauliflower and carrots
- 3/4 cup uncooked instant rice
- 1/4 tsp salt
SOUTHERN SUNDAY CHICKEN

In a large resealable bag, combine the first six ingredients
- 1/2 cup all-purpose flour
- 1 tsp paprika
- 1/4 to 1/2 tsp dried thyme
- 1/4 tsp celery seed
- 1/4 tsp pepper
- 1/8 tsp garlic powder
- 4 boneless skinless chicken breast halves
- 2 tsps butter
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 3 fresh mushrooms, sliced
- 1 can (14.5 oz) chicken broth
- 3 Tbsps all-purpose flour
- 1 cup evaporated milk
PEANUT BUTTER CHOCOLATE CHIP COOKIES

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 cup chunky peanut butter
- 3/4 cup butter, at room temperature
- 3/4 cup granulated sugar
- 3/4 cup packed light-brown sugar
- 1 tsp vanilla
- 2 large eggs
- 12 ounces (2 cups) semi-sweet chocolate chips
