CHUNKY POTATO SOUP

ICEBERG WEDGE SALAD WITH BACON, CARROTS, AND RADISHES

Trim stem from lettuce while leaving the core intact
- 1 head iceberg lettuce
- 6 slices bacon, crisp-cooked and halved
- 3 carrots, thinly bias-sliced
- 2 green onions chopped
- 6 radishes, sliced and/or chopped
- 1/4 cup olive oil or salad oil such as canola
- 1/4 cup red wine vinegar
- 3 cloves garlic, mashed
- 1/4 tsp salt
- 1/4 tsp coarse ground black pepper
HOMEMADE TOMATO SAUCE

Saute onion and garlic in oil in large saucepan until tender
- 1 large onion, chopped (1 cup)
- 1 clove garlic, finely chopped
- 1/4 cup olive oil
- 1 can (2 pounds, 3 ounces) Italian-stle whole tomatoes, with their liquid
- 1 can (6 oz) tomato paste
- 2 tsps leaf basil, crumbled
- 1 tsp salt
- Dash sugar
- 1 cup water
GARLIC-LEMON PORK

Place flour in a shallow dish and stir in 1 teaspoon lemon zest
- Coating the meat in flour dries the surface so it can get a nice crust and helps thicken the sauce. Feel free to try this recipe with chicken cutlets, or turkey cutlets, halved horizontally.
