EASY AND ELEGANT PORK TENDERLOIN

Preheat oven to 425 degrees
- 2 cups Italian seasoned bread crumbs
- 1/2 cup olive oil

- 1 1/2 pounds ground round
- 2 Tbsps (slightly rounded) Watkins meatloaf seasoning
- 1/2 cup oatmeal
- 1 egg
- 1/3 cup milk
- Freshly ground sea salt, if desired
DOUBLE CHOCOLATE COCONUT BROWNIES

Beat the brownie mix, oil, water and eggs on medium speed in a large bowl until blended; stir in chips and walnuts
- FROSTING:
- 1 package fudge brownie mix (13-inch x 9-inch pan size)
- 1/2 cup canola oil
- 1/4 cup water
- 3 eggs
- 1/2 cup semisweet chocolate chips
- 1/2 cup white baking chips
- 1/2 cup chopped walnuts
- 1 can (14 ounces) sweetened condensed milk
- 2-1/2 cups flaked coconut
- 1/4 cup butter, softened
- 1/4 cup evaporated milk
- 2 tablespoons baking cocoa
- 2 cups confectioners' sugar
- 1 teaspoon vanilla extract
ITALIAN MEAT AND POTATOES

In a large skillet, cook the beef, sausage, onion, pepper and salt over medium heat until meat is no longer pink
- 1 pound ground beef
- 1 pound bulk pork sausage
- ½ cup chopped onion
- ¼ tsp pepper
- 1/8 tsp salt
- 1 can (10-3/4 ounces) condensed cheddar
- cheese soup, undiluted
- 1 1/4 cups milk
- 1 can (8 oz) tomato sauce
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/4 tsp sugar
- 6 medium potatoes, peeled and thinly sliced
- 2 cups (8 oz) shredded mozzarella cheese
HEARTY POTATO & CHEDDAR WITH BACON SOUP

In a large saucepan cook bacon over medium-high heat until crisp
- 1/4 pound smoked sliced bacon, coarsely chopped
- 1/4 cup butter
- 2 smal leeks, trimmed, chopped
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 carrot, peeled, chopped
- 1/2 cup flour
- 6 cups chicken stock
- 3 pounds Idaho potatoes, peeled, cut into 1/2 inch pieces
- 1 pound Vermont Sharp Cheddar cheese, grated
- 1/3 tsp salt
- 1/4 tsp fresh ground pepper
- 1 cup heavy cream
HEALTHY SUPERMOIST CHOCOLATE CAKE

- 1 – 1 lb. 2.25 oz Betty Crocker Supermoist chocolate fudge cake mix
- 2 tsp ground cinnamon
- 3 zucchini, finely grated (about 3 cups)
- 5 large egg whites
- ¾ cup plain nonfat yogurt
- 1 ½ cups applesauce
SCALLOPED POTATOES & HAM

- 3 pounds medium-size potatoes, peeled and sliced
- 1 onion, chopped
- 1 cup shredded Cheddar cheese
- 1 cup chopped cooked ham
- 1 can (10 3/4 oz) reduced-fat cream of mushroom soup
- 1/2 cup water
BROCCOLI-CHEESE CHICKEN

In 10-inch skillet over medium-high heat, in hot margarine, cook chicken 10 minutes or until browned on both sides
- 1 Tbsp butter
- 4 boneless, skinless, chicken breast halves
- 1 can condensed Broccoli Cheese Soup
- 2 cups fresh broccoli flowerets
- 1/3 cup water or milk
- 1/8 tsp pepper
SUPERIOR MEATLOAF

Combine all ingredients. In a 2-quart baking dish microwave uncovered on high for 25 minutes

- 2 pounds ground beef
- 1 ½ cups fresh bread crumbs

- ¾ cup water
- 1/3 cup ketchup
BROCCOLI WITH ALMONDS & OLIVES

Combine oil and olives, almonds, lemon zest plus juice, and red-pepper flakes
- 1/3 cup extra-virgin olive oil
- 1/3 cup chopped pitted black olives, such as Kalamata or Nicoise
- 1/4 cup chopped toasted almonds
- 4 teaspoons grated lemon zest plus 1 tablespoon juice
- 3/4 teaspoon red-pepper flakes
- 1/3 cup chopped fresh parsley
- 8 cups blanched broccoli (from 2 bunches)
