Preheat oven to 350 degres
- 2 large eggs
- 3/4 cup evaporated milk
- 2 cups canned cream-style corn
- 2 cups fresh or frozen corn kernels
- 2 Tbsps unsalted butter, melted
- 3 Tbsps dark brown sugar
- 3 Tbsps cornstarch, mixed with 2 tablespoons bourbon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/8 tsp ground white pepper

In a large skillet, heat oil over medium-high
- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/3 cup tomato paste (from a 6-ounce can)
- 1/4 teaspoon cayenne pepper (optional)
- 4 teaspoons chili powder
- 1 pound ground beef (80 percent lean)
- Coarse salt
- 8 crisp taco shells
- Lettuce, tomatoes, scallions, cheddar, and lime wedges, for serving

BUSY-DAY PORK CHOPS

- 1/4 cup fat-free milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup seasoned bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder

- 4 boneless pork loin chops (4 ounces each)

- DRESSING:
- 3 cups cubed cooked chicken breast
- 4 celery ribs, chopped
- 2 medium carrots, chopped

- 2/3 cup honey Greek yogurt
- 4 teaspoons lemon juice
- 4 teaspoons honey
- 1 teaspoon curry powder
- 1/4 teaspoon salt

- 1/4 teaspoon pepper
- 1/8 teaspoon ground ginger
BEEF STROGANOFF WITH CABBAGE NOODLES

Fry the meat in as much oil as you need, on high heat
- 1 pound ground beef, or thinly sliced beef
- Half a very small onion
- 1 tsp tomato paste
- 1 clove crushed garlic
- 1 cube beef bouillon
- ¼ cup sour cream
- 1 head of cabbage

CAESAR SALAD WITH CREAMY CAESAR DRESSING

Combine all ingredients in a bowl; stir well with a whisk
- CREAMY CAESAR DRESSING:
- 8 cups sliced romaine lettuce
- 2 Tbsps (1/2 oz) grated fresh Parmesan cheese
- 1/3 cup plain fat-free yogurt
- 2 Tbsps fresh lemon juice
- 1 Tbsp olive oil
- 2 tsps red wine vinegar
- 2 tsps Worcestershire sauce
- 1 tsp anchovy paste
- 1 tsp Dijon mustard
- 1/2 tsp freshly ground pepper
- 1 garlic clove, minced

- 1/2 pound cooked shrimp, peeled, deveined and finely chopped
- 1/2 cup reduced-fat mayonnaise
- 2 green onions, thinly sliced
- 1 celery rib, finely chopped
- 1 teaspoon dill pickle relish
- Dash cayenne pepper
- 1 medium English cucumber, cut into 1/4-inch slices
- 1 . In a small bowl, combine the first six ingredients. Spoon onto cucumber slices. Serve immediately. Yield: 3 dozen.

- 1 cup chopped onion

- 1 (15-oz) can no-salt-added kidney beans, undrained
- 1 (14.5 oz) can no-salt-added stewed tomatoes
- 2 (8-oz) cans no-salt-added tomato sauce
- 1 Tbsp dried oregano
- 1 1/2 tsps chili powder
- 1 1/2 tsps ground cumin
- 1/2 tsp salt
- 1/4 to 1/2 tsp ground cinnamon
- 1/2 tsp pepper
- 7 Tbsps nonfat sour cream
- Sliced green onions (optional)
