CLEMENTINE'S OATMEAL CHOCOLATE CHIP COOKIES

Heat oven to 375 degrees
- 1 1/4 cups butter, softened (2 1/2 sticks)
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups unsifted flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 3 cups oats (uncooked)
- 2 cups semi-sweet chocolate chips
- 1 cup chopped walnuts
EASY PEACH COBBLER

In a 1-quart shallow casserole, combine fruit, sugar, 1 tablespoon baking mix and cinnamon
- 1/4 cup butter
- 4 cups peeled and sliced peaches, or apples
- 1/2 cup sugar
- 1 Tbsp plus 2/3 cup variety baking mix
- 1/2 tsp ground cinnamon
- 2 Tbsps firmly packed brown sugar
- 2 Tbsps milk
CHICKEN/ASPARAGUS ROLL-UPS

Season pounded chicken breasts lightly with salt and pepper
- 4 whole chicken breasts, split, skinned, boned and pounded thin
- Salt and pepper to taste
- 1 pound fresh asparagus, trimmed and washed
- 2 Tbsps flour
- 1 garlic clove, minced
- 1 tsp salt, divided
- 1/2 tsp leaf thyme, divided
- 1/4 tsp paprika
- 2 cups white onion, sliced 1/4 inch thick
- 3 large tomatoes, sliced 1/2 inch thick
- 1/2 cup chicken broth
BASIC CREPES (WILLIAMS-SONOMA)

- 1 egg
- 1/2 cup plus 1 Tbs. all-purpose flour
- 1/2 Tbs. melted unsalted butter, plus 8 tsp. butter

CHOCOLATE SAUCE DELUXE

- 1/2 cup butter
- 3 oz. bitter chocolate
- 2 1/2 cups powdered sugar
- 1 1/2 cups evaporated milk
- 1/8 tsp salt
- 1 tsp vanilla
PORK, BROCCOLI AND NOODLE SKILLET

This was terrific and so easy and quick
- 6 oz. (4 cups) uncooked dumpling egg noodles
- 4 cups Green Giant® SELECT® frozen broccoli florets
- 1 tablespoon margarine or butter
- 1 lb. pork tenderloin, cut crosswise into 1/4-inch slices
- 1 cup sliced fresh mushrooms
- 1 garlic clove, minced
- 1 (12-oz.) jar mushroom gravy (Packet is fine too)
- 1 tablespoon Worcestershire sauce
BEER-STEAMED SHRIMP WITH ANGEL HAIR PASTA

Bring beer to a boil in a Dutch oven over high heat
- 1 12-ounce bottle beer
- 1 pound medium peeled shrimp, deveined
- 1 cup vertically sliced onion
- 1/2 tsp salt
- 1 1/2 tsps grated lemon rind
- 1/4 tsp black pepper
- Dash of crushed red pepper
- 1 garlic clove, minced
- 2 Tbsps extra-virgin olive oil
- 2 Tbsps lemon juice
- 4 cups hot cooked angel hair pasta (8 oz uncooked)
- Minced fresh parsley
CHERRY-BLACKBERRY CRISP

In a large bowl, combine the brown sugar, tapioca, extract and cinnamon
- TOPPING:
- 2/3 cup packed brown sugar
- 2 tablespoons quick-cooking tapioca
- 1/2 teaspoon almond extract
- 1/4 teaspoon ground cinnamon
- 4 cups frozen pitted tart cherries, thawed
- 2 cups frozen unsweetened blackberries, thawed
- 1-1/2 cups all-purpose flour
- 1-1/2 cups sugar
- Dash salt
- 2/3 cup cold butter
- 1-1/2 cups finely chopped walnuts
- Whipped cream
BUFFET CASSEROLE

Prepare dinner as directed, except use ¾ cup milk
- 1 package Kraft macaroni and cheese dinner
- ½ cup chopped onion
- 2 Tbsps butter
- 1 can cream of celery soup
- 1 6-1/2 oz tuna, drained and flaked
- 1 3-oz can mushrooms, drained
EASY PLEASING MEATLOAF

- 2 pounds lean ground beef
- 1 6-oz package stuffing mix, any variety
- 1 cup water
- 2 eggs, beaten
- ½ cup barbecue sauce, divided, OR substitute ketchup
