HEALTHY MORNING MUFFINS

- Nonstick cooking spray
- 1 1/4 cups all-purpose flour (spooned and leveled)
- 1/2 cup packed dark-brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon coarse salt
- 1 cup old-fashioned rolled oats
- 1/2 cup raisins
- 3 tablespoons extra-virgin olive oil
- 1 large egg
- 1/3 cup skim milk
- 4 medium carrots, shredded
- 1 medium ripe banana, mashed
GERMAN CHOCOLATE BROWNIES

In a microwave, melt butter and chocolate; stir until smooth
- TOPPING:
- 1/2 cup butter, cubed
- 4 ounces German sweet chocolate, coarsely chopped
- 2 eggs, lightly beaten
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- 1/2 cup packed brown sugar
- 1 cup flaked coconut
- 1/2 cup chopped pecans
- 2 tablespoons corn syrup
- 2 tablespoons 2% milk
STEAMED BROCCOLI

Steam broccoli in microwave until crisp-tender
- 1 (16 oz) package frozen broccoli
- 1/4 cup reduced-calorie Italian dressing
SOUTHWESTERN PINEAPPLE PORK CHOPS

Sprinkle pork chops with pepper blend
- 4 boneless pork loin chops (5 ounces each)
- 1/2 teaspoon garlic pepper blend
- 1 tablespoon canola oil
- 1 can (8 ounces) unsweetened crushed pineapple, undrained
- 1 cup medium salsa
- Minced fresh cilantro (if desired)
CALIFORNIA COLESLAW (SUE HANSON)

Pour over cabbage mixture
- Toast:
- 1 head cabbage, shredded
- 3-4 green onions, chopped
- 1 pkg. Top Ramen noodles, crushed (do not cook) – Oriental Flavor is good!
- 1/4 cup sesame seeds
- 1/4 cup sunflower seeds
- 4 oz. slivered almonds
- Toss above ingredients with dressing:
- 1/4 cup oil
- 3 T. Vinegar
- 1 tsp. salt
- 1 T. sugar
- 1/2 tsp. pepper
- Flavor packet from noodles
KENTUCKY DERBY PIE

Prepare pastry for single-crust pie
- 1 recipe pastry for single-crust pie
- 3 slightly beaten eggs
- 3/4 cup light-colored corn syrup
- 3 Tbsps granulated sugar
- 3 Tbsps brown sugar
- 3 Tbsps butter, softened
- 1 tsp vanilla
- 1/8 tsp salt
- 1/2 cup finely chopped pecans
- 1/3 cup Kentucky bourbon
- 1 6-oz pkg semi-sweet chocolate pieces
- 1-1/2 cups pecan halves
ANGEL HAIR PASTA WITH SHRIMP AND LEMON CREAM SAUCE

Method 1 Bring a large pot of salted water to a boil
- 3/4 cup heavy whipping cream
- 1/4 cup chicken stock
- 3 Tbsp lemon juice
- 3/4 pound angel hair pasta (also called capellini)
- Salt and black pepper
- 1 pound raw medium shrimp, peeled and deveined*
- 1/2 cup (loosely packed) chopped parsley
- 1/4 cup (loosely packed) chopped chives
- Zest of a lemon
- 1/2 cup freshly grated parmesan cheese

- 3/4 lb. peeled and deveined uncooked medium shrimp
- 3 tsps cornstarch, divided
- 1/8 tsp ground ginger
- Dash of garlic powder
- 1/2 lb. fresh broccoli (1/2 bunch)
- 4 Tbsps butter, divided in half
- 1 cup cold water
- 1/2 tsp instant chicken bouillon granules
- 1 pkg (6 oz) frozen pea pods, thawed
SHRIMP, CHICKEN AND PINEAPPLE KABOBS

- 1/4 cup teriyaki sauce
- 1/4 cup rice vinegar
- 3 tablespoons olive oil
- 1 tablespoon fish sauce
- 1/2 teaspoon sriracha or other hot sauce
- 3 tablespoons packed dark brown sugar
- 1/2 teaspoon grated fresh ginger
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 3/4 pound raw cleaned and deveined shrimp
- 2 cups fresh pineapple chunks (about 18 pieces)
- 1/2 teaspoon cornstarch
SHEEPHERDER'S BREAKFAST

- 1 cup (4 ounces) shredded cheddar cheese
