Put all ingredients in a large pot
- 3 to 4 pounds apples, peeled, cored, and sliced.
- 4 strips lemon peel - use a vegetable peeler to strip 4 lengths.
- Juice of one lemon, about 3-4 Tbsps
- 2 tsps cinnamon
- 1/2 cup dark brown sugar
- up to 1/4 cup white sugar
- 1 cup water
- 1/2 tsp salt

This was so good. It runs on the spicy side, so if it is too hot, add ketchup to tone it down
- 1 Tablespoon extra-virgin olive oil
- 1 lb boneless, skinless chicken thighs, cut into 1 1/2 inch pieces
- 1 lb boneless, skinless chicken breasts, cut into 1 1/2 inch pieces

PASTA POMODORO WITH SHRIMP

To safely defrost frozen shrimp, place in a bowl of ice water
- 1/2 pound angel hair pasta
- 3/4 pound raw, peeled, deveined shrimp (medium sized)
- 4 medium ripe tomatoes
- 3 cloves garlic, minced
- 1/3 cup torn fresh basil leaves
- 3 Tbsp olive oil (divided, 1 Tbsp and 2 Tbsp)
