POTATO, BROCCOLI AND HAM CHOWDER

Place potato in medium saucepan; add enough water to cover
- 1 medium potato, cut into 1/2 inch pieces
- 1 cup frozen broccoli florets, cut into 1/2 inch pieces
- 1 tsp butter
- 1/4 lb cooked ham, cut into 1/2 inch cubes (3/4 cup)
- 1/2 cup chopped onion
- 1 1/2 cups skim milk
- 2 Tbsps all-purpose flour
- 1 oz (1/4 cup) shredded sharp Cheddar cheese
- 3 to 4 drops hot pepper sauce
CHICKEN WITH ONIONS & BALSAMIC VINEGAR

Heat 1 tablespoon oil in large skillet over moderately high heat
- 2 Tbsps olive oil
- 4 boneless skinned chicken breast halves
- 1/4 cup all-purpose flour
- 2 large onions, halved and thinly sliced
- 1 carrot, pared and cut into 3 x 1/8 inch strips
- 1/3 cup balsamic vinegar OR red wine vinegar
- 1 Tbsp tomato paste
- 2/3 cup chicken broth
- 1/2 tsp chopped fresh rosemary OR 1/4 tsp dried
BRUSCHETTA CHICKEN BAKE

Preheat to 400 degrees. Place tomatoes with their liquid in medium bowl
- 1 can )14 1/2 oz) diced tomatoes, undrained
- 1 pkg. (6 oz) stove top lower sodium stuffing mix for chicken
- 2 cloves garlic, minced
- 1 1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 tsp dried basil leaves
- 1 cup shredded Mozzarella cheese
CHOCOLATE TRUFFLE DESSERT

Prepare brownie batter according to package directions
- 1 package fudge brownie mix (8-inch-square pan size)
- 3 cups (18 ounces) semisweet chocolate chips
- 2 cups heavy whipping cream, divided
- 6 Tbsps butter, cubed
- 1 Tbsp instant coffee granules
- 3 Tbsps vanilla extract (This amount IS CORRECT)

- 3 cups sugar
- 1 cup salad oil
- 4 eggs, beaten
- 1 can (16 oz) pumpkin
- 3 ½ cups sifted flour
- 2 tsps baking soda

- 1 tsp baking powder
- 1 tsp nutmeg
- 1 tsp allspice
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 2/3 cup water
WARM SHRIMP SALAD

- 1/4 cup chopped onion
- 1 garlic clove, minced
- 1 Tbsp butter
- 1 lb. cooked medium shrimp
- 1/2 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 1/4 tsp crushed red pepper flakes
- 4 cups torn salad greens
THREE-BEAN TACO CHILI

In a Dutch oven, cook beef over medium heat until no longer pink; drain
- 2 pounds ground turkey or beef
- 2 cups water
- 1 can (16 ounces) refried beans
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (16 ounces) chili beans, undrained
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1 medium chopped onion
- 1 can (14-1/2 ounces) stewed tomatoes
- 1 can (8 ounces) tomato sauce
- 1 cup chunky salsa
- 1 envelope taco seasoning
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1 cup (4 ounces) shredded cheddar cheese

- 1 carrot, peeled and chopped
- 1 onion, chopped
- 2 Tbsps butter
- 2 Tbsps all-purpose flour
- 1 cup beef stock or broth
- 2 tsps Worcestershire sauce
- 1/2 cup frozen peas
- 2 Tbsps sour cream or softened cream cheese
- 1 large egg yolk
- 1/2 cup cream (vegetable or chicken broth may be substituted)
- 1 tsp sweet paprika
