Make cake: Preheat oven to 350�F with rack in middle
- For cake
- 2 cups plus 2 tablespoons sifted cake flour (not self-rising; sift before measuring)
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick unsalted butter, softened
- 1 cup sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs, at room temperature 30 minutes
- 1 cup well-shaken buttermilk
- For caramel glaze
- 1 cup heavy cream
- 1/2 cup packed light brown sugar
- 1 tablespoon light corn syrup
- 1 teaspoon pure vanilla extract
Pasta Salad with Goat Cheese and Arugula

In a large pot of boiling salted water, cook pasta until al dente
- Coarse salt and ground pepper
- 3/4 pound gemelli or other short pasta
- 1 can (15 ounces) cannellini beans, rinsed and drained
- 3/4 cup crumbled fresh goat cheese (3 ounces)
- 3 tablespoons olive oil
- 2 tablespoons red-wine vinegar
- 2 teaspoons Dijon mustard
- 1 bunch arugula (8 ounces), torn
- 1/2 small red onion, thinly sliced
Edamame "Hummus"

Set 1 tablespoon of edamame aside for a garnish
- 2 cups shelled edamame, cooked according to package directions
- 1 cup silken tofu, briefly drained of excess liquid
- 1/2 teaspoon salt, plus more to taste
- 3 cloves garlic
- 1/4 cup olive oil
- 1/3 cup lemon juice, plus more, to taste
- 1 1/2 teaspoons cumin, plus more, for garnish

- 8 Trader Joe’s Soft Lady Fingers OR 6 Specialty Bakers Ladyfingers*
- 1/2 cup cooled, strong-brewed, flavored coffee (or espresso); sweetened w/ Splenda or other no-cal sweetener
- 1/4 cup light ricotta cheese (not part-skim, light)
- 2 tbsp. Cool Whip Free
- 1/2 tsp. vanilla extract
- 1 tsp. Splenda
- 1 tbsp. unsweetened cocoa powder

- Cake:
- 1 (18 1/4-ounce) package yellow cake mix
- 1 egg
- 8 tablespoons butter, melted
- Filling:
- 1 (8-ounce) package cream cheese, softened
- 1 (15-ounce) can pumpkin
- 3 eggs
- 1 teaspoon vanilla
- 8 tablespoons butter, melted
- 1 (16-ounce) box powdered sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg

Mix sugar and cornstarch in a saucepan
- 1/2 c. sugar
- 2 Tbsp. cornstarch
- 1/2 cup water
- 1 Tbsp. strawberry jello
Pasta Primavera

Heat the oil in a large saute pan over medium-high heat
- 1 tablespoon olive oil
- 3 cloves minced garlic
- 1 red bell pepper, cleaned, seeded and cut into strips (6 ounces)
- 1/2 pound thin asparagus, trimmed and cut into 2-inch pieces
- 1 cup sliced button mushrooms (4 ounces)
- 1 cup grape or cherry tomatoes, sliced in 1/2 (6 ounces)
- 1 cup low-sodium chicken stock
- 1/2 cup 1 percent milk
- 1 tablespoon all-purpose flour, dissolved in 3 tablespoons water
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 large carrot (6 ounces) peeled and sliced into strips with a peeler (about 2 cups carrot ribbons)
- 3/4 pound whole-wheat linguine
- 1/2 cup (1 1/2 ounces) grated Parmesan
- 2 tablespoons chopped parsley leaves
- 1/4 cup shredded basil leaves

- 2 cups flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 6 tablespoons butter, divided
- 1 1/2 cups buttermilk
grilled vegetable and israeli couscous salad

1. slightly brown the butter in sauce pot and toast pine nuts until golden, remove and reserve on a plate 2
- dressing:
- 1 1/3 c israeli couscous
- 1 3/4 c vegetable or chicken broth
- 1/2 tbsp butter (yes, use butter!)
- 1/4 c pine nuts
- 1 tbsp olive oil
- vegetables of your choice (zucchini, bell peppers, cremini mushrooms, asparagus all work well)
- cherry or grape tomatoes
- zest of 1 lemon
- iberico cheese, cubed
- 1/4 c balsamic vinegar
- 1/4 c olive oil
- 2 tbsp honey
- 1-2 cloves minced garlic
- chopped parsley, basil and rosemary (I used fresh parsley and dried basil/rosemary)
- salt and pepper
