Icebox Strawberry Pie

- Filling
- 2 pounds frozen strawberries (see related tasting)
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 tablespoon unflavored gelatin
- 1 cup sugar
- Pinch salt
- 1 pound fresh strawberries , hulled and sliced thin
- 1 (9-inch) pie shell , baked and cooled (see note)
- Topping
- 4 ounces cream cheese , softened
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
Creamy Roasted Cauliflower and Broccoli Soup

Preheat oven to 400 degrees F
- 1 whole head cauliflower
- 2 cups broccoli flourets
- 1 large whole head garlic (I already had peeled garlic – I used 10 cloves)
- 1/2 tablespoon olive oil
- 1 tablespoon butter
- 1 1/2 stalks celery
- diced 1 yellow onion (nope!)
- diced 1 carrot
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon paprika
- 1/4 teaspoon dried thyme leaves
- 1 tablespoon flour
- 1/3 cup dry white wine
- 1/2 cup water
- 2 cups chicken or vegetable broth, plus up to 2 more as needed for desired consistency (I ended up using 4 cups total)
- 1 dried bay leaf (not a fan)
- 2 teaspoons fresh minced parsley (didn’t have any)
- 1/3 cup half and half
- 3 ounces cooked and crumbled bacon (no bacon)
- additional oil for serving – olive oil or truffle oil (no extra oil)
Black Bean Salad with Fuyu Persimmon, Avocado, and Lime-Cumin Vinaigrette

Pour the canned beans into a colander placed in the sink, then rinse well with cold water until no more foam appear...
- Dressing:
- 1 can black beans, rinsed well and drained in a colander
- 1 or 2 avocados, peeled and cut into 3/4 inch pieces
- 3 Fuyu persimmons, peeled and cut into 3/4 inch pieces
- 1/3 cup thinly sliced green onions
- salt to taste, for seasoning avocados and finished salad
- 1/4 cup extra-virgin olive oil
- 2 T fresh lime juice (plus 1 T more to toss with avocado)
- 1/2 tsp. ground cumin
- 1/4 tsp. green Tabasco (or other hot sauce of your choice, use more if you like it hot)
- 1 tsp. grated lime zest (optional, but good)
Banana Apricot Turnovers

Double Tree Hotel Chocolate Chip Cookies

Preheat oven to 375 degrees
- 1 1/2 cup butter softened
- 1 1/2 cup granulated sugar
- 3/4 cup firmly packed brown sugar
- 4 eggs
- 2 1/2 tsp. vanilla
- 1 tsp. lemon juice
- 3 cups all-purpose flour
- 3/4 cup old-fashioned oatmeal -- uncooked
- 3/4 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. ground cinnamon
- 3 cups semi-sweet chocolate chips -- ghiradelli
- 1 1/2 cups chopped walnuts
Pumpkin Gingerbread Trifle

Bake the gingerbread according to the package directions; cool completely
- 2 packages gingerbread mix - (14 oz)
- 1 package cook-and-serve vanilla pudding mix - (5.1 oz)
- 1 can pumpkin pie filling - (30 oz)
- 1/2 cup brown sugar - (packed)
- 1/3 teaspoon ground cardamom or cinnamon
- 1 container frozen whipped topping - (12 oz)
- 1/2 cup gingersnaps (optional)
Sauteed Chicken with Spinach

This recipe can be easily altered for four people
- 1 teaspoon white-wine vinegar
- 1 tablespoon minced shallot
- 1/2 tablespoon butter
- 1 tablespoon Dijon mustard
- 1 teaspoon olive oil
- 1 boneless, skinless chicken breast half (6 to 8 ounces)
- Coarse salt
- Ground pepper
- 4 cups (about 2 1/2 ounces) baby spinach
Buffalo Chicken Strips

- 2 tablespoons butter
- 3 tablespoons ketchup
- 1 to 2 tablespoons hot sauce
- 1 1/2 cups (spooned and leveled) all-purpose flour
- 2 large eggs
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 16 equal-size strips
- 4 cups vegetable oil
NYT Chocolate Chip Cookies

1. Sift flours, baking soda, baking powder and salt into a bowl
- 2 cups minus 2 tablespoons cake flour
- 1 2/3 cups (8 1/2 ounces) bread flour
- 1 1/4 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons coarse salt
- 2 1/2 sticks (1 1/4 cups) unsalted butter
- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated sugar
- 2 large eggs
- 2 teaspoons natural vanilla extract
- 1 1/4 pounds bittersweet chocolate disks or f�s, at least 60 percent cacao content (see note)
- Sea salt.
Chicken, Mushroom, and Goat-Cheese Burritos

In a large skillet with a lid, heat oil over medium
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 jalapeno chile (ribs and seeds removed for less heat), minced
- Coarse salt and ground pepper
- 10 ounces white button mushrooms, trimmed, thinly sliced
- 1 rotisserie chicken (about 2 1/2 pounds), skin removed and meat shredded (about 4 cups)
- 1 package (10 ounces) frozen corn kernels
- 1 cup prepared green salsa, plus more for serving
- 6 burrito-size (10-inch) flour tortillas
- 1 bunch flat-leaf spinach, thick stems removed (3 cups)
- 1 log (5 ounces) soft goat cheese, crumbled
