Pumpkin Pie Bites

Preheat oven to 375 F. Line the bottom of a 9x13-inch nonstick baking pan with parchment paper
- Crust
- 1 1/2 cups quick or rolled oats* (divided)
- 1 cup sorghum (or other whole grain) flour
- 1/2 teaspoon baking powder
- 1/2 cup brown sugar firmly packed
- 1/2 teaspoon cinnamon
- 1/2 cup apple sauce or apple butter
- 2 tablespoons water

Smoked Sausage, Butternut Squash and Wild Rice Soup

Quinoa Taboule Recipe

- 2 cups chicken stock or water for vegetarian
- 1 cup grape tomatoes, sliced in half
- 1 cup arugula, firmly packed
- ½ cup dried tart cherries (Trader Joe’s)

- ¼ cup Italian flat leaf parsley, minced
