Pinto Beans

1. Rinse the dried pinto beans, and sort through them for any stems, rocks, etc
- Pinto beans about 2 cups dried
- Stock or water
- Onion 1 medium, chopped
- Garlic 3-4 cloves, minced
- Red chile powder New Mexico is best. Found in the Hispanic section of the grocery store, usually in cellophane packets.
- Vegetable oil for sauteing garlic and onions (optional)
Basic Baked Oatmeal

1. Preheat oven to 350 degrees
- 2 cups old-fashioned oats
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 cup skim milk
- 1/2 cup nonfat greek yogurt
- 1 egg
- 2 very ripe bananas, mashed
- 1 tsp. maple extract (or vanilla)
Pumpkin Pie Pinwheel Cookies

Preheat oven to 375 degrees F
- 2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup butter, softened
- 1 1/4 cups sugar

- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup canned pumpkin
- 1 teaspoon pumpkin pie spice
- 1/4 cup plus 1 cup brown sugar

- 2 oz Semisweet chocolate
