Tomato, Olive, and Fresh Mozzarella Salad with Basil Vinaigrette

Drain olives and fresh mozzarella pearls while you cut cherry tomatoes in half; place tomatoes in bowl
- 1 can large black olives, cut in half (6 oz. olives after draining)
- 3 cups cherry tomatoes, cut in half
- 1 cup fresh mozzarella pearls, cut in half (or use regular fresh mozzarella and cut into pieces
- 1/2 cup vinaigrette dressing (I used my favorite vinaigrette, but any type of homemade or bottled vinaigrette that you like will work. A good choice would be Newman's Own Olive Oil and Vinegar Dressin
- 1/2 cup chopped or torn fresh basil leaves
- salt and fresh ground black pepper to taste

Three Cheese Tortellini Pasta Salad

Cook tortellini to desired doneness as directed on package
- 1 (7 oz.) pkg. cheese tortellini
- 1 cup sliced celery
- 1 cup fresh broccoli florets
- 1 cup cubed Cheddar cheese
- 1 (2 1/4 oz.) can sliced ripe olives, drained
- 1 cup cherry tomatoes, halved
- Parmesan Dressing
- 1/2 cup mayonnaise
- 3 tablespoons grated Parmesan cheese
- 1 tablespoon milk, more if needed
- 1 tablespoon lemon juice
- 1 1/2 teaspoon chopped fresh marjoram
- OR 1/2 teaspoon dried marjoram leaves
Corn, Avocado, and Tomato Salad

Combine the corn, avocado, tomatoes and onion in a large glass bowl
- Salad:
- 2 cups cooked corn, fresh or frozen
- 1 avocado, cut into 1/2-inch cubes

- 2 tablespoons olive oil
- 1/2 teaspoon grated lime zest

- 4 teaspoons sugar
- 1 - 2 tablespoons minced fresh mint leaves
- 1/4 teaspoon vanilla extract
- 1/2 medium cantaloupe , rind and seeds removed, cut into 1/2-inch pieces (about 3 cups)
- 2 red plums (or black), about 5 ounces each, pitted and cut into 1/2-inch pieces (about 2 cups)
- 8 ounces pitted, fresh cherries , halved (about 2 cups)
- 1 - 2 tablespoons fresh lime juice
