Vanilla Chai Chia Pudding

Add all ingredients to an airtight contain, and whisk together until incorporated
- 1 1/2 cups milk of choice
- 1/4 cup + 2 tablespoons chia seeds
- 2 1/2 tablespoons pure maple syrup
- 2 teaspoons pure vanilla extract or the seeds of 1 vanilla bean
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- pinch to 1/4 teaspoon ground cloves or to taste
- 1/8 teaspoon freshly-ground black pepper
- coconut whipped cream
Creamy Mushroom Soup

1) Slice mushrooms into bite-sized pieces
- 15 large whole shiitake mushrooms
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 onion, chopped
- 1 carrot, chopped
- 1 teaspoon thyme
- 1 teaspoon salt
- more salt to taste
- pepper to taste
- 2.5 cups water
- 1.5 cups half and half
- 3 green onions, chopped (OPTIONAL)
- Note: Double the recipe if you want leftovers
Slow Cooker Beef and Sausage Chili

In a large skillet, drizzle a few teaspoons of extra virgin olive oil and sauté the chopped yellow onion

- 1 teaspoon dried basil
- 1 teaspoon cayenne pepper
- 3 teaspoons hot pepper sauce of your choice
- 2 tablespoons Worcestershire sauce

Skinny Thai Peanut Chicken Soup

1. In a microwave safe plate or bowl, add onions, carrots, celery and red bell pepper
- 1 1/4 cups yellow onions, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 cup red bell peppers, diced
- Cooking spray, I like olive oil cooking spray
- 1 tablespoon garlic, minced
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon red pepper flakes
