Jalapeño Popper Mac and Cheese

Cook the pasta according to package directions to al dente
- 1 pound whole wheat pasta of choice (I loved using these medium shells!)
- 2 Tbsp butter
- 2 Tbsp whole wheat flour
- 2 cups milk
- 4 ounces fire-roasted and peeled chopped green chiles
- 4 ounces pickled jalapeños
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 2 cups sharp cheddar cheese
- 2 ounces cream cheese
- 1/4 cup breadcrumbs
- 1/4 cup Parmesan cheese
Pumpkin Pie Greek Yogurt

Take a container of plain Greek yogurt, and add a heaping spoonful of unsweetened pumpkin puree
- Single serve plain greek yogurt container
- Spoonful of pumpkin puree
- Honey to taste
- Cinnamon or pumpkin pie spice to taste
- Optional: Nuts of choice
Clean Eating BBQ Sauce Recipe

In a small saucepan, add all ingredients and whisk until well combined
- 1 cup water
- 6 oz can tomato paste
- 1/2 cup applesauce, unsweetened
- 3 tbsp unsulphured molasses
- 2 tbsp apple cider vinegar
- 1 tbsp raw honey or maple syrup
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp yellow mustard
- 1 tsp salt
- 1 tsp liquid smoke (I used hickory)
- 1/8 tsp cayenne pepper

Cook the bacon until crispy
- 15 Jalapeño Peppers
- 1 package of bacon - cooked until crispy
- 1/2 Cup Light Cream Cheese (I used chive)
- 1/4 Cup Cheddar Cheese
- 1 Tsp Garlic Powder
Peanut Butter Chia Pudding

- 2 cups milk of your choice
- 1/2 cup chia seeds
- 1/4 cup unsweetened natural peanut butter
- 1 teaspoon vanilla extract
- 1/2- 1 teaspoon honey or pure maple syrup (to taste)
Gouda Cheese Sauce with Sweet Potato Gnocchi

This delicious Gouda Cheese Sauce goes great with some Sweet Potato Gnocchi
- 2 cups milk, heated
- 1/4 whole onion
- 2 cloves garlic
- 3 whole sage leaves
- 3 tablespoons unsalted butter
- 3 tablespoons whole wheat flour
- 1 cup Gouda Cheese, shredded
- salt and freshly ground pepper, to taste
Apple Walnut Muffins

Preheat the oven to 350 degrees F
- 1 1/2 cups whole-wheat flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 2 eggs
- 1/3 cup pure maple syrup
- 1/3 cup water
- 5 tablespoons melted butter (can sub melted coconut oil)

- make your own balsamic glaze:
- 2 2 2 tbsp olive oil
- 1 1 1 lb brussels sprouts, trimmed and halved
- 2 2 1/2” large shallots, peeled and cut into 1/2” thick wedges
- to salt and black pepper to taste
- 1 1 1 tbsp balsamic glaze*
- to a cup of balsamic vinegar in a small saucepan over medium heat. Bring the heat to a boil without reducing the heat on the stove.
- to to to and transfer to an airtight container; store in the refrigerator until ready to use.
Quiche with Whole-Wheat Crust

In a 9-inch pie pan, combine all crust ingredients and mix with a fork
- Crust:
- 1.5 cups whole-wheat flour (I like King Arthur’s organic white whole-wheat flour)
- 1/2 cup melted butter
- 1/2 teaspoon salt
- 2 tablespoons milk
- Filling:
- 1.5 cups milk, preferably whole
- 4 farmers' market or organic eggs, beaten
- S & P to taste
- Dash cayenne pepper (optional)
- Any other extras you want: bacon, cheddar, goat cheese, diced tomatoes, roasted mushrooms, etc.
Pumpkin Spice Mini Muffins

- 2 cups whole wheat pastry flour
- 1 tablespoon baking powder
- 2 teaspoon pumpkin pie spice (no sugar added)
- 2 egg whites
- 1/3 cup honey
- 3/4 cup apple sauce (no sugar added)
- 2 tablespoon safflower oil
- 1/4 cup unsweetened almond milk
- 1 (15 ounce) can pumpkin (NOT pumpkin pie filling)
