Hibachi Style Chicken Fried Rice
- 2 boneless skinless chicken breasts, cooked and shredded
- 2-3 cups cooked brown rice
- 2 eggs
- 1 cup chopped onion
- 1 cup grated carrot
- 1/2 cup chopped green onion
- 1 cup green peas
- Toasted sesame seeds
- 4 tablespoons butter
- 1 tablespoon oil
- Reduced sodium soy sauce to taste
- salt and pepper to taste
- 3-4 cloves garlic
Prepare vegetables as directed (this step can be finished the night before to save time)
Cook and prepare chicken and rice as directed
Scramble eggs and chop after cooking into small pieces
Saute onion, green onion, carrots, and peas with garlic until cooked, and then mix in the scrambled egg and chicken pieces.
Break off chunks of brown rice and mix with vegetable, egg, and chicken mixture.
Add sesame seeds, salt and pepper, stirring well.
Add butter and soy sauce into the mixture, stirring until finished
