Sicilian Stuffed Peppers (Vegan)

- 1/2 cup dry quinoa + 1 cup water
- 6 red and/or yellow bell peppers
- splash low-sodium vegetable broth
- 4 cloves garlic, minced
- 1 sweet yellow onion, chopped
- 1 tsp. dried oregano
- 2 tsp. dried basil
- 1/2 tsp. garlic powder
- 3 mini zucchini, diced
- 8 ounces mushrooms, diced
- 1/4 cup no-salt added tomato paste
- 1 can low-sodium natural tomato sauce (14 oz / 398 ml)
- 6 fresh basil leaves, chopped
Bruschetta on Garlic Bread

- For the bruschetta:
- 4 vine tomatoes, chopped
- 1 large orange bell pepper, chopped
- 3 large garlic cloves, minced
- 10 small basil leaves, chopped
- salt and pepper, to taste (omit salt for healthier version)
- 3 - 4 tbsp. balsamic vinegar
- For the garlic bread:
- 8 slices 100% whole grain bread (or 100% rye bread)
- 2 whole cloves garlic

- 1 can salt-free tomato paste (6 oz/178 ml)
- 1 large white onion, chopped
- 2 large red bell peppers, finely chopped
- 8 cloves garlic, finely minced
- 4 tbsp. apple cider vinegar
- 1 1/2 tbsp. dried parsley
- 1 1/2 tbsp. dried oregano
- 1 1/2 tbsp. salt-free chili powder
- 2 tsp. smoked paprika (different than regular paprika)
- 1/2 tsp. chipotle powder (or more to taste)
- 1/4 tsp. crushed red pepper flakes (more to taste)
- 1 cubed sweet potato (optional)
- 1 can (14 oz/398 ml) no-salt chickpeas, drained and rinsed (optional)
